Crispy cereal pancakes turned out weird

  • Hello. I followed the recipe posted on this site for crispy cereal pancakes. They were ALMOST good, but the texture was rather rubbery. Did I do something wrong? I made one giant pancake, maybe that was my mistake? Make several smaller, thinner ones? Any advice?
  • You may have used too high a heat. I have found with both pancakes and the omelet mixes, anything more than the low end of medium and they come out flat and rubbery.

  • Also, these aren't gonna be you're Aunt Jimima or homemade fluffy pancakes. You can't turn a sow's ear into a silk purse (Wow! I finally have a reason in life to say that ol' saying). They're not GREAT pancakes, but they're good enough and change up how to eat the packets.

    You also can vary the amount of baking powder, or water, to change consistency. You can also let the batter sit longer to get more bubbly....

    Just play around. Don't give up on one failed recipe. Believe me, I'm on "burnt zuchinni chips, batch 74" by now. But, one day, one day, I plan to eat some crispy yummy chips!
  • I just made these for lunch - felt really hungry today a drink was not gonna do it - I tried to make the crepe ones the other day and failed - made the crispy cereal one and I loved them - I cooked them on about 5 but my stove is supper old- toped with wf pancake syrup was actually very delicious -
  • I make sure the crispy cereal is broken up really small. I use 1 egg, salt, cinnamon and water. Sometimes they are so good I want more, others they are a little too spongy. I think a tad but more water is key.
  • I use 2 oz very cold water+ 2 liquid egg whites + 1/4 tsp baking powder + almond extract + cinnamon + nutmeg + crispy cereal packet (powdered from taking the rolling pin to the pack prior to opening). I shake it thoroughly and let it sit while heating up a crepe pan on medium heat. I make very small pancakes so I can have like 6-8. I too top with WF pancake syrup and it is one of my fav breakfasts!

    This is too funny! I tried my first batch last night...FAIL!!! I'll be on batch 2 here pretty quick. I'd prefer to not go through 74, so if you figure out the secret, could you PM me??? LOL!
