Roasted, air-fried or grilled: broccoli, cauliflower, zuchini, yellow squash, mushrooms, cabbage, radishes, eggplant, asparagus

Riced or mashed: cauliflower

Made into "chips": zucchini, yellow squash, kale, cabbage leaves

Used in stir frys: any and all mentioned above! Great way to clean out fridge before they go bad!

I came across a recipe in a food magazine that sounded so good I had to make it protocol! Even my guy prefers it to regular dressing now!

Maple Vinaigrette

1/4 cup apple cider vinegar
1/4 cup olive oil
2 T Walden Farms pancake syrup
1 t sugar free maple extract
1.5 T dijon OR spicy brown mustard (dijon contains a smidge of wine)
1.5 t lemon juice

Place all ingredients in a tightly closed container and shake well. Makes about 2/3 cup. I count a serving (approx. 1 T) as one of my 5 daily "extras". It really perks up my daily lunch salad of unlimited veggies with some baby kale thrown in for good measure!
