Another thing I like to do is make a stir fry with chicken or beef, celery, red peppers, broccoli, etc. I toss in some onions at the end so they are softened but not too cooked.
For a marinade/sauce, I mix: soy sauce, lime juice, cilantro, garlic, grated ginger, red pepper flakes and maybe a touch of rice vinegar and water. I also love baked herb chicken. I COVER chicken tenderloins or breasts with marjoram, parsley, thyme, chives, garlic, onion powder, salt, pepper. You could also add a few slices of lemon. |

Make sure you try the Frank's Thick Buffalo sauce too; it's not as watery as the regular and a serving goes a long way. So yummy!

My best fast meal though is soup and I do that with pureed roasted vegetables (that I puree once a week and just reheat 3T of the puree with 12 oz water for 2 min in microwave, add EVOO, salt, pepper and garlic powder or onion powder. |

Hey LoriKay! I'm not a big fan of dried out chicken breast either. I cool trick I found out is no matter what kind of chicken you're using, leave it out for about 20-30 min before you start cooking. It turns a lot juicier if it has reached room temp right before cooking! And it's yummy! :)
