Festive Crunchy Pimento Scallion Crackers

Crunchy & Delicious!!

http://farm9.staticflickr.com/8126/8...e7f26ca6_z.jpg

1 packet IP Potato Puree
1/4 cup chopped green onion tops/scallions
1 TBSP pimentos pressed of all excess liquid, squeezed
1 TBSP dried shallots/or onions
1 tsp garlic gold nuggets
1 tsp salt, dash red pepper flakes
3 TBSP water

http://farm9.staticflickr.com/8104/8...5a5745ab_z.jpg

add all ingredients into your magic bullet and blend for about 5-10 seconds until blended.

turn out onto parchment paper lined baking pan

http://farm9.staticflickr.com/8123/8...d25280b8_z.jpg

i sprayed with non-stick pam spray and then folded over one side of the parchment paper and rolled the dough thin with a rolling pin, peel back parchment paper carefully and slowly.

http://farm9.staticflickr.com/8382/8...145f7100_z.jpg

score your "crackers" with a pizza cutter or knife

then i put the parchment paper with crackers on top of a wire backing rack so that heat would get underneath them

http://farm9.staticflickr.com/8245/8...dcd1e37c_z.jpg

bake 350 for about 15 mins or until edges are starting to brown and crisp

then take them off the parchment paper and put them directly onto the wire rack...continue baking until desired crispness.

http://farm9.staticflickr.com/8523/8...0cd6d36c_z.jpg

you can even pull them apart for more toasting for an extra crunch.

ENJOY!!!
I enjoyed mine with my Golden Goddess Soup!! YUM!

Ideal Protein Garlic Bread Sticks & Roasted Red Pepper Panini

http://farm9.staticflickr.com/8544/8...ed2b16ac_z.jpg

if you haven't already tried the flat bread recipe...you should...it is delicious!!
http://farm9.staticflickr.com/8542/8...4ab2d3cc_z.jpg

i made it exactly as the recipe called for...was very skeptical...and very surprised!! it is fluffy, light, yet just moist enough...and has a lovely flavor.

as a test kitchen...i decided to try bread sticks and a panini!!

http://farm9.staticflickr.com/8540/8...d682102ec1.jpg

I made mine in a pyrex dish

http://farm9.staticflickr.com/8256/8...e55a298fc6.jpg

let cool....and then slice into desired shape!

http://farm9.staticflickr.com/8393/8...bb51311550.jpg
lots of herb goodness!!!

http://farm9.staticflickr.com/8540/8...1b4d33a88b.jpg

of course, i hard to take a taste!! hot out of the oven goodness!!
BREAD on Ideal Protein...
oh YES YOU CAN!!!

http://farm9.staticflickr.com/8399/8...9d1db32a78.jpg

i cut mine in half...then cut one half into 5 bread sticks...(one was a sample!!)

recipe would make 10 garlic bread sticks!!

i put the bread sticks back into the 350 degree oven and baked 10 more minutes until nice and crispy!!! sprayed lightly with olive oil and then sprinkled with garlic salt!! YUM!!!

http://farm9.staticflickr.com/8118/8...46846fc18e.jpg

the other half, i sliced open to make the panini! i used a little homemade mayo pesto, you can also use walden farms flavored mayo, a large sliced of roasted red pepper, and some red onion slices....you can also add some fresh baby spinach leaves but i was out....sadly.

http://farm9.staticflickr.com/8264/8...93e4db6bdb.jpg

press in a panini press and enjoy!!

http://farm9.staticflickr.com/8402/8...1b86672e5f.jpg

i served my panini and bread sticks with some golden goddess veggie puree soup!!

Mine stuck to the Pyrex dish. Next time I'll put some parchment in the bottom of the pan.
I don't have a nonstick pan this shape...

Yup. Sprayed. Mine is olive oil. Next time I'll use coconut oil AND parchment. No stick!

But...

I had these for lunch with my mockamole.
OH.SO.GOOD!

I made a double-batch. It fit great in a 9x9! If I made a single batch, I'd probably use my pyrex loaf pan.

And next time I'm adding more garlic!
