Mashed Cauliflower Question ???!!!???
 
I made this last night for dinner and OMG it was AMAZING! So delicious and tasted like mashed potatoes. I added garlic/onion powder, salt/pepper and a tiny bit of olive oil. Anyways, when measuring out my "1 cup" it took about 1/3 of the head of cauliflower, is this correct? Am I eating too much? Not sure if I need to measure "before" mashing the veggies or not. Calorie wise, it was a total of about 50 calories which still isn't too bad at all. :?::?:

Measure your veggies raw. I usually break up the cauli into small pieces when I measure it.

Thanks for the tip, it was too good to be true I was too satisfied for a diet haha!

Have you tried roasting cauliflower? I'm a roasted cauliflower junkie since starting IP. I eat it nearly every day.

It's simple. Just toss the florettes with olive oil and sea salt, and roast at 400-425 degrees until browned. I usually turn them over after the tops brown.

You can add garlic poweder or other seasonings too.
