Turkey Day in Canada
So Canadian Ipeeps... what will you be eating this holiday weekend?
I will be making roast turkey, celery root, asparagus and 'mock' pumpkin pie (made with rutabega)... not sure about a gravy and cranberry subsitute yet... open to suggestions! |
Interesting! I am curious how rutabega pie is going to turn out. For cranberry sauce - Raspberry Gelatin? Maybe mix up with Blueberry, Cranberry, Pomegranate drink for more tartness? Gravy....I'm thinking something like take one of the soups packets and put Turkey or Beef soup base in it (it will be super salty so maybe try to find a no salt one?) :shrug:
I will be interested to know how it all turns out! |

i made the raspberry jelly with cranberry green tea instead of water, added 1 packet of plain gelatin for extra thickness, poured it an empty can that you can removed the bottom with a can opener....let it set then cut the bottom off, pushed out the "cranberry sauce" and sliced into thick slices.
it was heavenly good!!! |
also, in the mix'n in the kitch'n thread, there is a recipe i made for stuffing!!

My coach gave me some recipes for T-Giving:
Cranberry relish: 1 c water 1 c whole fresh cranberries 4 celery sticks, chopped 1 c chives, chopped 1 c chopped zucchini 6 mint leaves 1 tsp orange jest 1 IP Raspberry Jelly packet 3 tsp WF raspberry jelly 1tsp stevia or other sweetener boil the cranberries in the cup of water for about 5 min. Pour the water off into a cup - should be about 5oz of liquid and still warm. Put the IP raspberry jelly packet into it and mix well. Pour into a bowl and put in the icebox to set up. Chop together cranberries, celery, chives, zucchini, mint leaves and orange zest. Chop in a food processor or by hand. mix in with stevia and WF raspberry jelly into the jelly mix cooling in the icebox. Add the cranberries and the vegetables and mix together. Let cool in bowl then serve with celery sticks or flax seed crackers |
There's a green bean casserole and a stuffing one as well. Maybe we should start a 'holiday recipe' thread.

I'm opting out of Thanksgiving this year because I don't think I'm ready to be put in that situation. My family is going out of town to my aunt's house and she doesn't know what healthy cooking is, so it'll be pretty hard for me to eat what I need to while I'm there.
I'm just gonna stick to what I know this weekend and maybe indulge in a couple more of the pumpkin spice coffee/IP vanilla drinks I've been having for breakfast. |

they are so few berries with all the other "stuff" it's probably a non-issue, but would cranberries not be a big no-no? Or are we making an exception due to holiday? It sounds pretty delish -- I'm picturing rainbow adding the oatmeal cereal to make a cranberry crumble for dessert too! LOL
