Zucchini chips was a bust :-(
I attempted to make zucchini chips to watch the Redskins game yesterday and they did not come out crispy at all!! I did about 9 minutes on each side and some were still soft....what's the best thing to do if I don't have a dehydrator?? I loved them but was in the mood for crunchy food :(

Most of the folks here have baked them at really low heat for about 1 hour on each side. I made them once - not bad - but I over-spiced them.

I actually made some this weekend and baked at 280 for 1.5 hours and they came out pretty good. I don't have a mandolin so hand sliced them as thin as I could.

My successful zuke chips are made on one of the silicon microwave chip makers. (small radish chips explode into flames though using it!!!) I was very very very unsuccessful with my dehydrator zuke chip experiment. No matter how long I left them in the dehydrator, most stuck.

My tips:
-Slice fairly thin- about the thickness of a US quarter. Any thinner and they will stick -Lay on parchment paper covered cookies sheets to prevent sticking -Mist with EVOO (or brush lightly if you don't have a mister) and season lightly -Bake for an hour before turning, then check every 15 mins or so until you get the desired crispiness. I season my chips with onion salt, they are delicious! |
