Favorite veggies to prep as lunch?
 
Hi,

I just started IP and am still trying to get into the swing of things.

I'm having trouble with my lunch veggies. Do any of you have any suggestions on good veggies to pack in a cooler bag? I don't have access to a microwave most lunches. Do you just eat a lot of salads? I can do that, but imagine it would get boring after a few weeks.

I love slicing up some cucumbers and taking that to work :-D or even celery

I like cucumbers and tomato with salt and some italian Walden Farms dressing or just the cucumbers that way, I do it several times a week. I also like raw green peppers. Raw veggies take longer for your body to digest so it also helps to feel full longer :-) good luck

As everyone has already said cucumbers and I add apple cider salt pepper so good.

I think I have had a salad every week day since feb 2011!

Would you consider a thermos? You could boil and mash cauliflower, or do one of lizRR s puréed and MADD it to the soups. Heat in the morning.

Or if you eat breakfast at home try the omlette with 2 cups of veggies. Then at lunch you only need a shaker....

On Sunday evenings I cut up a head of cauliflower, a head of broccoli, green onions, and red/yellow/green peppers. It keeps in the refrigerator all week. In the mornings I measure out two cups of my mixed vegies, dump my vinegar and oil dressing on top and shake it up a bit then cover it with lettuce. Awesome salad that keeps me full all afternoon!!!!

I was never much of a salad eater, but have been eating one every day since I started July 9th. What helps me is that I found a couple of dressings that I really like and a good combinaton of veggies.

Lately I have lettuce, spinach, mild sliced deli peppers & red cabbage with the WF Italian dressing.

Another favorite is my asian salad which is lettuce, peppers, onions, cucumbers, jicama and the WF Asian dressing.

I also like that I don't have to microwave anything while at work.

Try jicama if you can find it! I often bring it to work - 1 cup diced, tossed with a little cinnamon and splenda!

Cukes with homemade vinagrette and liberal salt- the salt really makes a difference for me. I sometimes throw in green pepper or sliced mushrooms, easy to sit and pick at my desk.

Don't forget you can also have dill pickles as a veg!

I second the jicama. Also I like celery with some WF peanut butter spread on it. Can't stand the taste of the peanut butter by itself, but put on some celery and it's okay.

I am addicted to red peppers - I slice them up and eat them every day - don't know what I would have done without them!

I do a cup of spinach in my shakes. I do two packets of Choc drink mix, 14 oz water a sprinkle of cinnamon and two cups of spinach.... A drink for lunch and one for breakfast. :)

I like the WF French onion dip to be tasty with almost any raw veggie and easy to snack at my desk between meetings.
