Recipes using oatmeal?

Help. I did 3 searches and it keeps giving me non IP results. The recipe threads are so overwhelming.

I ordered 2 boxes of oatmeal- maple brown sugar and peaches and cream.
Previously not an oatmeal fan, I discovered I'm still not. It has good flavor but it's a texture issue with me.
My cat, however, loved it and was grabbing my spoon away from my mouth.

Is there a way to make cookies or other stuff?

See page 4 if it doesn't take you directly there -- Sweet Sheila posts a few ideas (some look like they're for different phases, some look like they're for all phases).

I made pancakes with my oatmeal packet and put some WF pancake syrup on it. YUMMM!

I have a couple. I love the zuchini muffins, haven't made the biscuits yet.

Oatmeal Biscuits

(Equivalent to 2 Ideal Protein foods. Yield: approx. 12 biscuits)
2 packets of Ideal Protein Maple Oatmeal
1 large egg white
1 1-2 ounces of water

Beat egg then stir into oatmeal until mixed thoroughly. Add water to thin batter until spoonable – but not runny. Spoon onto non-stick baking sheet and bake about 10 minutes at 400°F (205°C) or until golden.

Oatmeal Zucchini Muffins

1 package of Ideal Protein Maple Oatmeal
2 egg whites
1/2 tsp baking powder
Pinch of salt
1 tsp of Sucralose, Stevia or Xylotol
1-1/2 tsp cinnamon
1/2-3/4 of small zucchini finely grated (squeeze out excess juice) 2-3 oz water

Beat the egg in a bowl. Add Maple Oatmeal, baking powder, salt, Sucralose, cinnamon, and zucchini. Mix and gradually add water until you have a good batter. Bake at 385°F (200°C) for 20 minutes. Makes 3 regular muffins or 12-bite size

Remember the oatmeal is a restricted item

If you bought the Maple Oatmeal and Peaches & Cream online, I'm assuming these are alternative products, not the IP? I know there are two brands whose oatmeals are unrestricted.

That said, most of the recipes on here are packet hacks for the IP products, I don't know how they will translate for alternative brands but it's worth a shot!

Yes it's Healthwise brand with 8 g. carbs. I'm pretty sure they'll work in a recipe. I may try the biscuits or a variation on cookies as I don't have any pudding mixes. I mostly just want to use them instead of trashing them.

I made the berry muffins this morning, very tasty.... uses 1 maple oatmeal packet and 1 wildberry yogurt drink. It made 12 mini muffins so I can have 6 each morning.

Maple Oatmeal and Chocolate Pancake Muffins
Mix 2 packets together, add 1 egg white, add 1 tspn of baking powder, add water until it is a batter-like consistency. Use paper liners. Makes 6 muffins (in regular size pan) and 3 muffins count as 1 restricted packet. Drizzle with WF chocolate syrup.

I use alternatives and they usually don't work well in the recipes.
One thing I do with my alternative oatmeal is use it over rhubarb.

I put about a cup of rhubarb with some Splenda in the microwave for about 2-3 minutes.
then I mix the oatmael packet with 2 ounces of water and spread it over the rhubarb.
Then I put it in the over preheated to 350 for 20 minutes.
I have it several times a week.

I've never had rhubarb this is a reason to try it.

I am going to be phasing off soon, so maybe I can make an apple crisp with it in maintance.

I also think the peach would make good breakfast biscuits.

Thanks for all your replies!
