Is rhubarb a restricted veggie (only twice a week)?

Nope! You can have it everyday, its on the Select list!

I just checked my phase 1 sheet and it lists rhubarb under the normal veggie list.

Rhubarb is awesome...having some shortly simmered with some walden farms strawberry spread mixed in...YUM!

Yes! That is exactly what I did! It was so good that I felt guilty, so I figures it must be restricted! Haha!

Rhubarb gives me my fruit fix! When we were kids we use to just peel it and eat it raw and I still like it that way. I've made rhubarb crumble with oatmeal which was good. Or microwave 1 to 2 cups till soft, put in magic bullet with 4 oz water and a pudding pack and a spoon of WF caramel dip or strawberry syrup and eat it warm or put in the freezer until frosty, yum. Tonight I just microwaved it and added one tbls of WF strawberry syrup. Need to try it over pancakes yet!

I use it in am omelett with Splenda and cinnamon! Super good!

I make rhubarb compote with cinnamon and splenda or stevia. I dice it and put just enough water to cover the rhubarb and simmer it until the consistency is right. I refrigerate it and sweeten it when I eat it so I don't overdo it with the splenda. Yummy! A good way to get your fruit fix in and so good it feels like cheating.

I made ice cream with mine after blending it with a chocolate shake mix. A touch of pumpkin pie spice on top makes a bit of a crust and it's dang tasty. Also very helpful if you have 2 or 4 times a week to help with the big C. I have not had a single problem with that since I have discovered that little trick.

I nuke a frozen bag (4 cups worth) ~5 minutes, until mushy, then add in 2tbsp WF Strawberry Spread. Keep that saved in the fridge for crispy cereal pancake topping

Anyone in CT able to find frozen rhubarb? I haven't been able to, and the fresh stuff is long gone!!! I miss it!

I'm in Maryland, but I found frozen rhubarb at Whole Foods. Might try there if you have them in CT, or possibly Trader Joe's.

I remember other IPers have found it frozen at Whole Foods as well. I also like rhubarb upside down cake! Stewed with WF strawberry, then topped with Crispy Cereal + 2 egg whites and baked at 350 for ~15 minutes...so good, and unrestricted!
