Breakfast@8am: Spinach Smoothie

Lunch@12pm: Soup & Fruit
IP Chicken a la King
8oz Chicken Broth <--1 cup adds 5 calories from 1g protein
Rhubarb
WF Strawberry Spread <--pairs deliciously with the rhubarb!
Snack@4pm: Restricted
IP White Cheddar Ridges
Phase3/4 Workshop@6pm <--excited to learn more about IP as I get closer to goal!
Dinner@8pm: Strawberry Milkshake
8oz Silken Tofu <--ran out of meat, this is a nice backup to have!
Rhubarb <--yes I know, a lot of rhubarb today...having "C" issues and heard this can help

In the past I had sauteed it in a pan, but I am getting lazy in my old age. I buy it bagged, chopped, and frozen at the grocery store and throw it in a glass bowl (still frozen, I'm lazy) and microwave it for 6 minutes, stir & mush, then nuke it for a final 2 minutes, then I add in 2 tablespoons of WF Strawberry Spread and mix it all together until the spread dissolves. I've blended it in the past with my immersion blender - but that's not necessary as it gets pretty mushy just forking it up.
1 bag is ~4 cups chopped (at least what I buy) so I use 2x the sweetener. The cook times can vary based on your microwave, just make sure it doesn't "boil over the bowl" in there. It's pretty easy to make, you can use any combination of sweeteners or extracts to your taste. Some folks add some vanilla extract, cinammon, Stevia/Splenda, WF Pancake Syrup or Caramel Sauce. Personally I prefer it with the WF Strawberry Spread.

I never had rhubarb before. Where do you buy it frozen?

B- black coffee; vanilla pudding shake
snack - chocolate RTD
L- omelette with mushrooms and spinach
*I noticed that the herb omelette makes me very tired. I experimented with the plain omelette today, and I am not tired. Isn't that weird?

I had to look for it, but I found frozen rhubarb at H-E-B Central Market in Plano, Tx. It's a TX based grocery chain, I think some folks found it at whole foods.

B-fast: whoops, this never happens but I was exhausted yesterday and I accidentally slept until 11 AM today! :O so I skipped it..I know, I know :/
Lunch: IP crispy cereal made into pancakes, yum!
Snack: I had 2 IP packets since I skipped breakfast.
1 IP chocolate drink + 1 IP vanilla pudding made into ice-cream. It was like a pint of ice cream haha
Tea
Dinner: Ratatouille with ground meat, which was so flavorful and delicious.

We are moving this week...so my willpower is really tested. I don't have much time to prepare my meals but I've managed so far and I'm sooooo proud of it ;-) I can do it!!

Lettuce + cucumbers + grilled seasoned pork

we ordered vietnamese so I had a grilled chicken + veggies soup and asked them to remove noodles and carrots ;-) It was perfect.
Snack
Vanilla wafers - yummy!
