I made tandori tofu and it was good!!! I just did lemon juice, tandori seasoning, crushed garlic and cauliflower, red pepper, tofu, tomato in marinade. Cooked at 400 for 35 mins. I liked it! I had a jallepeno in there for some kick and boy it gave it!

It was perfect timing for me to have this thread bumped up. I moved to phase 2 last weekend prior to a vacation and after a couple of days, I struggled with the volume of protein. In particular at work, I already take an hour to eat my raw cut veggies but now it is taking longer to also get down the protein. So I decided to switch to tofu options as a less heavy lunch protein. I bought a package of silk tofu and just lightly mashed it in a container then poured 1 cup of stewed rhubarb over top. Then had 1 cup of raw veggies on the side. It was a perfect lunch. Now I'm going to look through more of these tofu recipes to find other options.
