2 egg whites
1/4 tsp cream of tartar
1/4 tsp baking powder

Lunch@12pm: Fathers Day Outing
Omelette with smoked salmon, red peppers, tomato
Asparagus
Spinach salad

Snack@4pm: veggie croquettes
IP Potato Purée
4 oz chicken broth
1.5 cups assorted bell peppers

Dinner@8pm: spinach smoothie
EAS Carb Control Chocolate RTD
3 cups decaf french vanilla tea
1 stevia packet

Breakfast: Vanilla Drink Mix w/ Cinnamon

Lunch: Peach Mango Drink w/ a BIG salad ~ EVOO, Vinegar, Lemon Dressing

Dinner: 8oz Turkey & 2 Cups Green Cabbage & Mushroom "Stir-Fry"

Snack: Dark Chocolate Pudding into drink w/ WF Strawberry Syrup


I love to get dinner ideas from this type of thread.... Keeps me from getting bored!

The Cauliflower Fried Rice was AWESOME!!!!

Breakfast: iced cappachino with vanilla pudding packet mixed in

Noon: salad, pure protein bar

Supper: pork tenderloin and turkey breast (total 8 oz), salad

Bedtime: rhubarb crisp (3 c rhubarb as no IP veggies at supper)

Me too! It also helps me plan my menu and stay accountable. I wish more folks would post, I need ideas! The recipe threads can get overwhelming, but there are a ton of great ideas there. Usually I get inspired by someone's food blurb on the daily.

I deviated after a few 'baked veggie croquette' googlings. The taste was delicious, but improvements can be made - I had already used my 2 egg whites daily allowance that would have helped! My improved, but not completely tested recipe is below, I'll also add it to the recipe #3 thread, since it's slightly different than the original.

Baked Veggie Croquette
Ingredients:
IP Potato Puree
1-2 cups of veggies finely chopped. I used mixed bell peppers & jalapeños
3 oz chicken broth
1 egg white
Spices. I used garlic, salt, & pepper

Directions:
Sautée the veggies until tender and cooked through.
While that's going, mix the Potato Puree with 3 oz of heated chicken broth, egg white, and spices.
Once the veggies are cooked, add to the rest of the ingredients.
Spoon ~1 tbsp servings onto prepared baking sheet formed into ~10-12 log shapes and cook at 350 degrees until slightly browned and set, ~18-20 minutes.
I can also see adding some puréed veggies (cauliflower, celeriac, mushrooms, etc)to make it more substantial.

5 oz cooked Extra Lean Ground Beef

2 Tbsp WF Thick & Spicy BBQ Sauce
1 tsp EVOO/ Himalayan Salt
Tisane Tea

Snack:
IP Choc Peanut Bar
1 c low sodium Garilic Dill Pickles
