Bok choy help!

I bought some bok choy earlier this week and I have NO idea what to do with it. I like a lot of different veggies but I want to try more. How can I cook this? I now understand I should have gotten baby bok choy, but I have the full grown stuff. After looking all over the net and on this forum I still don't know what to do! :(
Please help

Thank you!

Chop it roughly and stir fry with a little garlic and olive oil. I sometimes mix in ginger too or othe veggies. You can also julienne it fine and eat it raw in a salad. Yes I find the baby bok choy is easier to work with but they taste the same in the end.

Bok Choy has a lot of dirt inside it. So take it apart leaf by leaf, rinse under running water, and then chop it.

I usually prepare it the same way as kitkat by satueeing it with sliced garlic and some crushed peppers. It also tastes good with shitake mushroom.

Do you use both the leaves and the stalks?
It sounds like this would pair well with zucchini and peppers too.
Thank you so much ladies! :)

Yes you can use both leaves and stalks. Just cut the last end of the stalk like you would for celery.

I also prefer the baby bok choy but you get more with the full sized ones. I stir fried bell peppers and added the bok choy towards the end. It cooks quickly. Well, the leafy part wilts quickly sort of like spinach. For me it paired well with orange/yellow bell peppers.

I used this as my inspiration

I used this because I had no idea how to cut it up.

Stefany, SO glad you brought up this question. Have been tempted to buy bok choy but never knew what to do with the darn stuff.

Thanks to those who answered! These ideas sound yummy, and I'm in the mood for a change from our regular vegies.
