I made Cauliflower Rice for dinner tonight and was surprised at how yummy it was. DH even mentioned that he thought it was pretty good and would like to have it for dinner instead of just regular steamed cauliflower. So thankful for this as I had a hard time eating cooked cauliflower.

Well, late night for me. Been doing quick catchup, my dad has been in town this week and we have taken advantage of the extra hand and gotten stuff done! Crazy random, I found a squirrel in my shower this afternoon! They'd been chewing up our siding which we just replaced and must have trapped him in the attic...lucky us, he found his way out!

I think Wuv is still at her family reunion wowing it up! I miss her!

And just fyi, I do weigh myself at home occasionally. But I don't take the numbers personally. Maybe its the logical engineer in me, but I know I am OP, I know the numbers jump down 'stairstep' style, and I know that water retention, tom, etc all normalize over a few weeks. This program works, I've got 9 weeks of data to prove it. I expect the ups and downs.

If seeing the occassional blip is going to disappoint, discourage, and sabotage you then STAY OFF THE DAILY SCALE. You will not see a loss every day, you will be the same, maybe gain some, then a few days later drop crazy weight. If tom looms (like mine is in a few days), odds are you will have an off week that you will make up. Sewmam, Wuv, and others are proof that if you stay the course IT WORKS!

The only place I have heard about that is IP "friendly" is miguels.

It's nice to have someone in the same area to compare notes with! It was so nice out today, could almost be called warm.

I made that last night too ... I didn't really have too high hopes for it but it was SO GOOD!!!! And it was super easy ... I was too lazy to pull out my food processor so I grated the cauliflower by hand but even with that it took no time to make and was so worth it

I visited North Pole last year! Loved it! I now have a very pretty hand made ornament for my Christmas tree to remember the trip. I visited U of Alaska (they are a client) and loved the area.

We don't have a food processor (I just never feel like paying that much money for an item I rarely use) so I also grated the cauliflower by end. I ended up adding an egg, minced onion, and some soy sauce to the mixture to make it a little more like Chinese fried rice. I do think it would have been better had I added in real onions, though. Maybe next time!
