Fish...help!!!
What is your favorite way to fix the following fish:
Cod Mahi Mahi Salmon oh...and Sea Scallops! I am having one of these tonight, but cannot decide which one and would love some new recipe's! I am not much of a cook so the easier the better!!! :-) Oh...and the veggies you would put with them and how to fix those as well!!! :D Thanks y'all for your help...and...HAPPY WEEKEND!!! |
I had salmon the other night. Baked in the oven with 2 slices of lemon on top and a slice of bacon. I did not eat the bacon, but it was so good.

I like fish simply cooked, so I cook most types the same way.
Spray with oil, sprinkle with salt, let sit a few minutes to bring the sugars to the surface and make the top brown a bit under heat, and then broil till the fish is just barely cooked. Roasted veg are nice with cod. I just cut up onions, mushrooms, cauliflower, red peppers, whatever else I feel like, spray with oil, salt lightly, and roast at 425F till cooked through. Mahi mahi is nice marinated. Use any combination of an acid and a fat (vinegar and oil and spices, for instance.). Broil or BBQ till just barely cooked. The veg would depend on the marinade. If you have nice salmon and like sashimi, you can quickly sear the outside of each piece to kill any bacteria, leaving the inside uncooked, then chill a few minutes in the freezer, and then slice and eat with wasabe and soy. You could slice a half an avocado to go with it. As for the scallops, I'd probably saute them very quickly with some asparagus or another delicately-flavored veg. |
Can we have capers? Someone on FB said to sautee capers in olive oil and cook in that...thoughts???

Too late but for next time
For my salmon:
In a zip lock bag I put 1/2 Tbsp oil (using garlic roasted grapeseed oil lately) (don't really measure) old bay garlic powder onion powder 1/2 packet sazon place it in the broiler until it's cooked--check online for cook times for thickness of your particular salmon piece Veggies: In a zip lock bag I put- Asparagus (if doing this use less oil on salmon) 1-1.5tsp of oil garlic powder bake 15-20 min @ 325 OR Spinach: in a pan a little bit of oil few cloves of garlic and 10oz bag of spinach ...let it cook down on a medium heat. I love grilling my fish, I have Lemon and herb spice I put on it, then I make a cilantro sauce instead of tartar sauce. I also put chili powder and lime when I cook them to use with the cilantro sauce. I also bake the same way when it is too cold to grill

I use our old George Foreman for fish; usually add some Lemon Pepper to the Mahi Mahi. I have about a dozen spice mixes I use for different items I grill, another fav is a Weber N’Orleans Cajun Seasoning - adds a lot of zip to the fish and doesn't burn when grilled.
