Question Salmon

Why is Salmon only allowed once a week? I just realized this tonight. I always think of it as a better alternative than beef or pork? I get the bag of wild salmon at WalMart and they are only like 3g fat per 4oz piece.

Anyway, just don't get the restriction...

I was told it's because it's considered higher in fat then some of the other choices.

Yeah, it is because it's higher in fat. Same goes for red tuna and lamb, which I never eat, but there are some really good sounding recipes for in the new IP cookbook that I'll probably try using beef instead.
