Can we use Soy Sauce, and if so any certain brand anyone uses

Yes. go for a low sodium and, if you can get it, gluten-free. If not, just be cautious about the volume of regular sodium considering the sodium level

I found one soy sauce that had sugar in it, I think it was china lily brand. So make sure to check that out as well :) Kikkomen didn't have any sugar in it though.
