I'm sorry - quite honestly I use them when I NEED SOMETHING CRUNCHY....so if my eating Kale makes me go over so be it. I don't eat them every week. More like every two weeks...I have made that a decision and really it's the best I can do. I have never eaten Kale any other way. It's suppose to be the king of veggies though. Full of good stuff. So if if eating THAT makes me go over a bit and some may call it a cheat, so be it :) it's a better choice then I've ever made lol. My coach knows that and she's ok with it.

No I haven't tried to make the kale chips yet so reading carefully what everyone is saying. It seems one thing is to make sure it is dry before putting it in the oven. I didn't realize you got so much from one bunch.

I'm out in the boonies, I'll look for the kale and also kohlrabi when I go into the city this weekend.

Pat

Pat if you are coming to Edmonton go to H & W produce that is where I buy all my veggies, cheaper than any stores. NW side of Edmonton 127 st and I think 134 ave. Or NE edmonton Victoria trail by Giant Tiger. Also one on south side on 34 street on auto road east of parsons road. Pat they had a good selection of both kale and kohlrabi but I didn't buy their rubarb as it looked old and stringy.

Yes it counts as your 4 cups as well. I think you can have a little more but... don't go over board. Rooster is it just veggies you want more of? Maybe you should have a little more protein for supper?

Kale is from the cabbage family, in some stores they call it collard greens (which it isn't) just ask the folks from the south... Kale has a lot of iron and is very good for you, even off this diet, my friend eats it while training for a marathon. I generally have Kale on the week I am giving blood so my iron count is good. I have also tried endive chips, but kale is better.

Hope this helps.

I have a question. . .how do you measure kale? Do you fill up a measuring cup? Do you tightly or loosely fill it? The tag on the kale states that 1.5 cups is equal to 63g, which is WAY more than can fit in a cup. When I asked my coach, she had no idea.

I just push it down in a 2 cup measuring cup BEFORE cooking, I don't pack tightly, but certainly not loose, medium packed. Hope this helps.
