Default Food Diary

Hi, this is my first post to the 3 fat chicks forums. I started the ip diet 3 weeks ago and started a tumblr recording all the meals that I am eating in Phase 1. Most recipes are from people on this 3 fat chicks forum and others are from other sources. I have included pics and reviews of the food. Please check it out!

Default Lettuce soup

Just made this for lunch and it was a tasty new way to get in more lettuce.

Lettuce Soup
2 leeks, chopped
1 tsp olive oil
1 clove garlic, minced
4 cups broth (chicken or veg)
1 head romaine lettuce, rough chopped
1/4 cup chopped taragon (I didn't have this so substituted a bit of fennel, basil and thyme mix)
Salt and pepper to taste

Put the oil into a medium hot pan. Saute the leeks and garlic for about 10 minutes until tender and lightly browned. Mix in the chicken broth and simmer on low for about 10-15 minutes.

Increase heat to medium and stir in the romaine lettuce. Cook for 5 minutes and add the tarragon or herbs. Remove from the heat. Blend in a blender or with an immersion blender until smooth. Season to taste with salt and pepper. Serve hot.

Default 15-minute roasted garlic and tomato sauce (for IP rotini)

Ingredients:

2 c cherry tomatoes, washed and patted dry
6 (or more) garlic cloves, left with skins on (all about the same size)
2-4 tsp olive oil
salt & pepper to taste
2 IP rotini packs (cooked, with 1/2 cooking liquid reserved)

Directions:

Preheat oven to 400F. Place all ingredients (except rotini) on cookie sheet. Toss everything together and spead it out as much as you can. Roast 15 minutes (or until desired "roastedness" is achieved). Cool ingredients slightly. Squeeze garlic out of skins and put garlic in a blender (or use stick blender) with tomatoes and reserved cooking liquid. Puree. Add more cooking liquid if needed to achieve desired sauce thickness. Serve over rotini.

Makes 2 servings.

I've made this twice now and I love it! I serve it with grilled eggplant. Enjoy!

Default BBQ sauce 1 carb

I must have a very sensitive palate because I cannot stand any (except the pancake syrup) WF condiments or dressings. To me they all have a very chemical flavor. My hubby likes some of them, but I don't. I use 1 carb Heinz ketchup, and using that I came up with a 1 carb (per Tblsp) bbq sauce. It uses Splenda, and I know there are those who don't use it, but I've had no adverse affects, and besides, it's 1 or 2 Tblsp per serving. I dip my roasted chicken breast in it for a tasty treat. And if you like the WF ketchup, it would be even less carb.

1 c tomato sauce
1 c low carb ketchup
½ c white vinegar
½ c splenda
¼ c brown sugar substitute (or extra splenda depending on how sweet you like your sauce)

put in small sauce pan and bring to very slow bubble

Add:

½ tsp black pepper
2 tsp liquid smoke
½ tsp paprika (smoked paprika is best)
1 tsp garlic pwder
1 tsp onion pwder
½ tsp chili pwder
dash cayenne pwder
dash cinnamon

Simmer on very low heat for 20 min to blend flavors.

Makes about 3 cups. 1 carb/Tblsp

Hi Everyone!

I hope its okay to post this here. I know I mentioned this recipe last week so I wanted to pass it on to everyone (apologies if this is somewhere else). I got this from the Ideal Protein daily video that my coach sends me. They called it "tabbouleh" and said it was a substitute for it. That had me excited at first because I love tabbouleh but when I watched them make it, I knew it had nothing to do with the tabbouleh I know and love. I decided to make it because I was worried I might start to crack on just steamed broccoli (wasn't thinking too creatively those first days) . It is totally yummy, super easy to make and you can make it in little batches so it is ready when you are so Bon Appetit, Ali

You can play with it – everyone does but it is pretty much a negative calorie dish if you think about it (except the dash of olive oil)

Ideal Protein Tabbouleh Salad Recipe

Ingredients
1 – Cauliflower Head
5 – Medium Mushrooms
3 – Small Dill Pickles
1 – Celery Stalk
1 – Cucumber
1 tsp Minced Garlic
1 – 1/4 Cup Diced Red Onion
1 tsp Olive Oil
1 tbsp Horseradish Mustard
1 tbsp of White Wine Vinegar
Pinch of Chives
Chopped Basil to taste
Sea Salt to taste
Directions:
Dice or coarsely chop all the ingredients and put them in a mixing bowl. Add Mustard, Vinegar, Oil, then sprinkle with sea salt. Mix it all together and enjoy.

Note: Play around with this recipe and have fun with it. Use the ingredients and directions as a starting point. You can also add protein to this salad, such as grilled chicken or tuna.

I hope it was okay to post this here. I am still new to this. I am on my 13th day. I lost 6 lbs on my 1st WI. Tomorrow is #2. Fingers crossed.

Made this tonight and it was beyond amazing! I almost had trouble stopping at 2 cups!

Just reduce the amount of oil used.

I also sprinkled on garlic powder and cayenne pepper. And, I didn't use the caraway seeds.

Default Asparagus Guacamole

A friend just shared this recipe with me. I think I'll be trying it. A lot of online recipes call for adding some sour cream or yogurt. I'm thinking about using an avocado & cutting out my olive oil for the day.


Asparagus Guacamole
2 bags of steam in bag asparagus
1 lime (or 3 packets of true lime)

1/2-1 bunch of cilantro, finely chopped
2-3 cloves of garlic, chopped
1 small to medium tomato, chopped (optional)
Salt, cumin powder, cayenne pepper (or Jalapeno) to taste

Steam asparagus in bags, overcook a little
cut in 1 in pieces, drain on papertowels, squeeze dry and let cool

Put asparagus in blender with lime juice, cilantro, garlic and tomato and give it a whirl.
Season to taste and chill

Treat asparagus just as you would avocado.
You hardly can tell the difference and it fits into all IP phases!!!

Serve it with taco seasoned ground sirloin or grilled chicken breast with
cilantro lime slaw in lettuce wrappers.


Cilantro Lime Slaw

2-3 cups of finely shredded green cabbage
Juice of 1 lime
Olive oil
1/2 tsp cumin seed
Salt and white pepper to taste


Mix and chill.
enjoy!
