Getting tired of veggies! Any ideas??
 
I thought I ate healthy before, but 4 cups of veggies every single day gets challenging, and I've only been on IP for 2 weeks! I have 6 more months to go until I reach my goal weight... does anyone have any ideas for more variety or other ways to prepare my veggies? I've been eating 1 cup raw spinach salad with cucumbers and some type of P1 dressing, then 1 cup veggies containing hot peppers, bell pepper and cucumbers, every day, twice a day. For dinner a lot of times I'll also steam broccoli with ACV, sea salt and pepper. Just getting kind of tired of the same thing.

have you tried turnip fries? cauliflower rice, zuchini chips or baked cauliflower in salt pepper and olive oil. All of these are to die for!

My favorite way to make veggies is by roasting them. I hear roasted cauliflower is divine, though I have yet to try it.

I too love roasting my veggies.. I do cabbage, brocolli, cauliflower, peppers, if we can have it, I've roasted it. Even my picky teenager LOVES the roasted veggies. HIGHLY recommend trying it!! :hug:

THANK YOU everyone! Part of the problem I'm having is that I don't like as many veggies as I thought I did. Aside from carrots and tomatoes, which I can't have right now, the ones I eat on a daily basis are the ones I mainly like. I would like to try the turnip fries, zucchini chips and roasted veggies though!

If anyone has other ideas to add please post! Thanks again.

Vegetable curries are always delicious! Basically using spices will help every type of veggie. But I agree with everyone else here. Roasted veggies are amazing! My favorites are green beans, asparagus, and Brussels sprouts! Yumm!

Steamed spinach, a marinated salad of approved veggies ( marinate in oil, cider vinegar, lemon pepper, salt, pepper, garlic and a package of stevia).
I also cook cauliflower, broccoli and leeks and add it to my soups.
I have also cooked sliced mushrooms and added them to my mushroom soup.
I have made a broc salad using waldens farms mayo, splenda and some cider vinegar.
Roasted white turnips, tri color pepper slaw.
Roasted asparagus or cauliflower with olive oil, salt and garlic.
I also made a warm salad for a dinner party with button mushrooms, and a great oil and vinegar dressing.
Zuchinni with onions(add them at the end so they are still crunchy and not carmalizd), with a 1/4 cup of tomatoes or salsa on top, baked in the oven.

Try Broccolini, Kai-lan

Dill pickles are acceptable as is pickled asparagus.

Search allrecipes for veggie recipes that you can modify to fit into the IP plan.

My favorite thing to do is marinate raw veggies in a ziploc with Dijon mustard vinegrette. Recipe is 6 T evoo, 2 T cider vinegar, 2 T dijon mustard, 1 t sea salt, 1 t grnd black pepper. Ziploc over nite and put over lettuce. Takes care of my need for crunch AND veggie requirement. :wave::joker:

go through the recipe threads there are tons of ideas. also try other forums and their recipes I have found lot that I can fix for IP.

Marinate in WF Italian and put them on the grill.

try grilling mushrooms. Either regular or portabello. I make a sauce of Braggs amino, cider vinegar and water and brush liberally. YUMMMM

How does one make crispy turnip fries??? and zucchini chips? How do you prevent them from going soggy?

Slice them thin and toss with garlic powder, onion powder, your sea salt, your olive oil and pepper.
Bake in a 350 degree oven for 20 minutes until golden brown. Make sure you watch them they burn easily.
Delicious!

I like to BBQ my veggie with the EVOO and the salt (cause i have a hard time getting both in).
You can all try that Big Mac in a bowl and just throw in some extra veggies. I also fry up some veggies for the chili and the spaghetti.
