Help me with the 2 Cups Veggies
 
What is your go-to site or is there already a list for determining how much of a certain vegetable equals 1 cup/2 cups? I need something that says 1 med cucumber=x cups, or 1 lb broccoli=x cups, until I figure this out in my head goign forward.

Sorry if this has been asked and answered, if so, please point me in the right direction.

What I do here that's worked for me:

I got a bunch of 2-cup pyrex containers with lids. When I cook/prep my veggies for the week, I portion them out into the containers. One full container = one serving. Makes life a lot easier.

Your fist is about the size of one cup. Estimate two fists worth of volume, and you're good. It doesn't have to be that exact, as long as you're in the ballpark. ;-)

I measure my veggies in a dry measuring cup.

I have found that 1 large cucumber will be about 2 cups.

I cut everything up and put it in the measuring cup. Also, you can look on packages to see how much is in there. But mostly they are by weight and not volume.

I love cauliflower. I get so many cups out of one head of cauliflower, 6 or 8? and I notice it stays fresh longer than most veggies, too. I used to hate cauliflower, but now I'm never without a good supply of it. :)

Here's what I go to: http://www.nal.usda.gov/fnic/foodcomp/search/

For instance, I type in asparagus, chose asparagus raw, enter 2 cups, and it tells me that equals 268 grams. Foolproof. (The latter is a reference to me, not you.)
