Cooked onions?
I have no idea why we aren't supposed to eat cooked onions. Anyone?

No, but I wish I knew too! I use raw in salad but I have cooked them when I do an omlet or saute veggies

When you cook onions you break down the sugars in the onions into complex carbohydrates, which is why they become caramelized and very sweet. If you want the flavor of "cooked onions" try using leeks instead. The flavor is much milder but can satisfy that cooked onion taste in any recipe.

Cooking raises the sugar level in the onions. It increases the sugars and therefore, the carb count. That's why we're not supposed to cook them on IP. Cooked onions have more carbs than we are alotted with the veggies. Also, when you cook them you can caramelize them, which really raises the sugar level. But raw are fine! :D

Oh, I didn't know this about onions. I guess I will skip the grilled onions in my morning omelets from now on.

I use dehydrated onions all the time....they pack the flavor, but you don't need to use much. I also ALWAYS have green onions (scallions) on hand. They are so easy to add to food and taste great raw on top of salads, etc.
