Amazing IP pudding discovery (for IP tweakers)
If you are strictly by the book on your IP products, look away now.
For the tweakers, I discovered something very interesting. The puddings are among my favorite IP options, particularly the Dark Chocolate and the Butterscotch. Sometimes I vary the water to make it more shake-like than thick, and get a little more volume, but I can sense the graininess of the powder. I had some unsweetened coconut milk (the brand that Jillian Michaels is promoting) that comes in the two quart container in the "dairy" case, with the "milks". 50 calories for 8 oz, 1 carb, 0 protein, 5 fat (MCFA). Well, I mixed eight ounces of that with the pudding mix in the shaker and popped it in the fridge for it to set like I usually do. Well, something in the coconut milk worked with the thickeners in the pudding mix and it was awesome. Even with the extra liquid, it was very thick and even more pudding-like. I haven't bought any more because I haven't gotten approval from my coach to use it on an ongoing basis and I try to stick pretty close to the food items on plan and just vary the quantities based on how I am feeling. But, I will say it was gooooooooood. I also put in a little flavored liquid stevia when I stretch the pudding a little that way. ;) ;) |
I haven't used the coconut milk but I have added the carmel sauce and the chocolate sauce to my puddings and they were excellent. Sometimes I use 8oz of water and put a few ice cubes in it and shake shake shake and shake some more. I've added cinnamon, coconut extract....experiment and play around and see what you like!

What carmel sauce and chocolate sauce? I'm going to look for the coconut milk, I'm excited about it. I'll simmer my chicken in it too.
