What vegetable surprised you?
 
I had Kale tonight for supper for the first time and I will definately be purchasing it again. I just fried it up with a little olive oil, water, garlic, lemon juice and vinegar.

I tried the turnip fries the other night and I have to say I was not impressed. I am sure it had something to do with the seasoning blend that I used. What have you tried that you really liked.

Kale was the first one to surprise me as well! I stir-fried it with some curried tofu & it remained crisp & was delicious!

Leeks were another. (for one I had no idea they were basically onions until my grocery basket started smelling like onions, lol) But they are a bit sweeter. Love them!

Carrots never surprised me...they look delicious. But I just have to give them a shout-out. they`re awesome. :D

Cauliflower!! I have always hated it. But I put it in a baggie (or a big bowl with a lid)with a little olive oil, garlic powder, and chili powder and roast it in the oven (I think I got this recipe off one of the recipe threads). Then I dip it in WF ranch or WF bacon and ranch. Love it.

Also the turnip fries, I put in a baggie (or a bowl with a lid) with a little olive oil, garlic powder and onion powder then roast them in oven. I have not been able to get them very crispy, but I still think they are delicious.

I like a big variety of veggies, but the ones I didn't really eat before are cauliflower, turnips, and brussel sprouts, all seasoned well and roasted, YUMMY!!!

Kale chips are the best! Rip the kale into bite-size "chips," drizzle or toss with salt and olive oil, bake at 350 for 15ish minutes and you have a nice, crisp alternative to chips!

Vegetable surprizes?
 
rapini was a first for me.....blanched it and drained it then chopped into bite size pieces.....heat some olive oil, chili pepper flakes and 4 cloves of garlic finely chopped....toss in the rapini to heat and coat......yummy.....the rutabega fries don't get super crispy but they are very yummy:T....however trying it with turnip was a disaster - soggy!

kohlrabi. kind of a lot of work, but really good once it's cooked. tastes like broccoli stems.

Kale chips (made with a little bit of vinegar and salt) are one of my fav's and Fennel salad is also a good veggie that I never had before IP.

I had kale before but am eating a lot more of it. I add some onion powder and it reminds me of Lay's Sour Cream and Onion.

I am really enjoying Mustard Greens, too. One of my repeats is a quick sauté with garlic and baby portobello, some Bragg's Liquid Amino, and served with the IP Mushroom Soup as a sauce.

Asparagus is heavy in the rotation, too. Basically everything gets a quick sauté with a small amount of grape seed oil, B'sLA. :)

I tried Red Dandelion but it was too bitter for me.

Ditto-love, love, love Kale Chips just like this! Never even knew what Kale was before!

I also really like Turnip Fries--I use salt and an herb/garlic seasoning and well, YUMMY! Never ate turnips before either.

Otherwise, I've always been a good veggie eater (well, except brussel sprouts).

rhubarb....
cut up into bite size chunks, cover and microwave on 70% until it gets a bit mushy (that apple pie filling consistency)

Make a batch of vanilla pudding and pour over the top...add some cinnamon and nutmeg...eat it warm...heavenly! and its unrestricted!!

Baby Bok Choy!
 
I've always been into pretty much any veggie, the greener, the better. I had bok choy years ago and didn't like it, don't remember why though. I bought some baby bok choy and added it to a veggie soup...wow, it was awesome! So tender and so tasty. I'm trying it in a "stir fry" this evening with some napa cabbage, mushrooms, kale, zucchini, bean sprouts, Braggs, no fat chicken broth, onion and garlic.

Has anyone tried collard greens? I love them! They're a lot like kale but a bit more bitter so I cook them with vinegar and let them simmer longer. They're great with a little sea salt and curry.

My next experiment is going to be dandelion greens mixed with mustard greens. Wish me luck!
