Karen, keep it up - it sounds like you're doing great! Yeah, those veggies at night are a Godsend when the hungries strike.
I have a whole list of low starch veggies I got out of the new Mayo Clinic Diet book that I eat to my heart's content (without counting). |

Congratulations! I'm totally with you on thinking about how to plan for healthy eating while you're traveling. I find it very hard to count calories when eating out because how do you know what they put in the food! I've started bringing my own salad dressing with me and mostly sticking to salad out at restaurants and then eating some extra healthy snacks to round out my dinner (e.g apples, granola bar, bowl of cereal, etc). Of course it's also harder to work out when you're traveling - a double whammy.
