Default Shift Work Diet Help

Hey everyone, I'm at a loss for what to do and I've finally turned to the internet for help.

Here's where my problem is, I recently started a new job working in a deli at a grocery store and I'm finding it very hard to get myself to exercise after work and I don't really know if I'm eating right (I don't exactly know a whole lot about dieting). During the run of a typical work day I eat breakfast around 7am, usually a slice of peanut butter toast or corn bran cereal, a turkey sandwich around 11 or 12pm for lunch with a bottle of water, a granola bar at some point in the afternoon with more water. It's when I get off work I have the most trouble. I do eat supper around 5pm but I find I'm too tired to exercise and I pick at snacks during the night before I go to bed. In the last year I lost about 10-15lbs but for the past couple months my weight has just kind of stayed the same.

Any help on how I can get my diet off the ground again would be great.
