Just go into your User CP and edit your signature. And change the numbers on your tracker.
Does that make sense? Let me know if you're still having trouble!

If you look at the code for your tracker you'll see something like this:

[retro6/cartoonerm01/lb/190/165/180/.png[/img]

Just change the number for your current weight ( for me that would be the 180)
