I was going to have a chicken cesar salad (low fat cesar dressing) with home made whole wheat croutons but it's such a lovely day outside today so I have decided to have bbq Salmon with brown rice and a salad instead. Yummo!

Ropa vieja, basically slow roasted flank steak in a tomato sauce served over rice. I've never made it before so hopefully it'll be yummy!

I made chicken parmesan last night (healthy version), so we're having leftovers tonight. I'm going to have mine over spaghetti squash, with some low fat marinara, a sprinkle of parmesan cheese and a side of roasted asparagus (boyfriend hates spaghetti squash, so I'll boil up some pasta for him).

Hubby wants spaghetti with meat sauce, so while he has that, my dinner will look a lot like Glory's - spaghetti squash, marina, sprinkle of parmesan.

i found this great low fat healthy fish taco recipe that is phenominal.

A small jar of roasted red peppers in water chopped up and mixed with white meat chicken strips, sauteed in a little olive oil and lots of Italian seasoning. My 5-minute meal when I'm in a hurry!

Broiled Salmon with lemon juice and a loaded veggie salad....

I'm grilling eggplant pizza - eggplant slices, pizza sauce, cheese. Yum.

I'm having a nice lonely friday night....1/2 a can of tuna with lemon juice and spices on salad, I've been left alone at home so I feel like lying down in front of the tv and not moving all evening, :devil: so a nice easy dinner for me tonight

yum--I planted some eggplant for the first time--some already have flowers...I love eggplant....
