Side dish ideas?
 

I'm making King Ranch casserole tonight for dinner and wondered what to use for a side dish. The meal itself includes chicken and corn tortillas, peppers and I'm going to throw in some onion and garlic...maybe even some shredded carrot. I thought about maybe some pinto beans on the side...maybe even some brussels sprouts - but the sprouts don't "go" with the tex-mex meal.

My husband's very first words will be "Where are the potatoes!?" I don't think it needs anything starchy....

Any thoughts or ideas?

mm that sounds good. i personally would toss in some frozen corn and zucchini and serve as a one dish meal. i think a green salad and maybe some sort of side veggie- corn or grean beens or something would be good. oh maybe some seasoned up brown rice- so he can get his starch fix. :)
