Default Turning otherwise fattening foods into something a little healthier

I would LOVE to hear how you've altered recipes of calorie-dense dishes into something lower fat and cal.

For example, when I make tacos, I use fat-free shredded cheese and all-white meat ground turkey instead of full-fat cheese and ground beef. And I use fat-free or light sour cream for topping.

What are some of your fave recipes that you've changed around to make a healthier version?

Oh, I have a bunch of general things:

I make a "cream" sauce by melting 2 tbsp of light margarine (80 cals total) and stirring in 2 tbsp of flour, then cooking that for a little bit...whisk in a mixture of about 3/4 c skim milk and 1 1/4 c fat/sodium reduced chicken broth. Add a clove of garlic, minced finely, and salt and pepper to taste - cook until thick. Garlic "cream" sauce, for 75 cals a serving.

Replace oil with chicken broth, for nearly all savory stuff. In salad dressings, in spreads, when cooking veggies, etc. Additionally, use chicken broth to cook somewhat plain things (rice, couscous, etc) - the added flavor means you won't miss the fat! I make all kinds of spreads and dips and dressings using only chicken broth, no fat at all. For example, you can make a simple dijon vinaigrette with a tbsp or two of dijon, a few splashes of champagne or white wine vinegar, salt, pepper...then just slowly whisk in chicken broth until its at the consistency you prefer. Sometimes this requires a little splenda or sugar to take the bite off the vinegar/dijon combo.

Ooooooooo! You know what? I've been trying to think of a way to make a lowfat cream sauce, thank you!

Wow, what a bunch of yummy ideas. I especially like the dijon/vinegar idea. I am already a chicken broth person...why didnt i think of that?

My tips:
Whipped cream cheese has less cals than light cream cheese but has all the rich taste of regular cream cheese since its not "diet"...who knew.

Chicken parm using shake and bake, light cheese, and no sugar added marinara and i LOAD up the marina with sauted veggies.

Miracle whip has less cals and tastes better (to me) than light mayo.

Apple cobbler/pie- i buy canned fried apples (90 cals a serving) and add splenda brown sugar, cinamon, and nutmeg and smush them up as i fry them using butter flavored Pam. Then put them in a philo dough premade shell...small ones are 30 cals each. Add some cold vanilla splenda ice cream on top...you feel SUPER indulged for about 150 cals.

I recently had a major cheesecake craving and went to the kitchen with bad intentions, but ended up mixing the following together in a bowl:
  • tub of fat-free cream cheese
  • about half of a big tub of fat-free sour cream
  • box of sugar-free cheesecake pudding mix
  • splash of vanilla
  • sprinkle of Splenda
  • drizzle of skim milk
  • squirt of lemon juice
You like all those exact measurement? I scooped the mixture into 5 small bowls (between 1/2-3/4 cup per serving) and figured the calories to be about 115 per serving. I've had this for breakfast a few mornings this week with some fresh whole strawberries--YUM! It's much thicker than just the cheesecake pudding alone (which, IMO, doesn't much resemble cheesecake at all), yet requires no baking since there are no eggs or anything (which is good for me because, well, I'm lazy ).
