Brown Rice & ???
 
I have been eating a lot of brown rice for my lunch. I usually just put a tablespoon of Trader Joe's salsa on it for flavor, which is pretty good, but I am looking for some other suggestions to flavor my brown rice.

btw... I don't cook the rice from stratch I use Trader Joe's brown rice in the microwave for 3 minutes so it will have to be more of a topping for the rice.

I usually eat brown rice with stir fried veggies or I'll add some kidney beans with some cumin. Come to think of it, rice is a staple in my household. We eat it with everything.

Do you mean just brown rice alone for lunch? I think it would be much more satisfying with a protein. Could you mix stuff up at home, put it in a container, and put it over your rice before you nuke it?

Beans with the salsa would be great, like the last poster said. How about almonds, dried crans, and plain yogurt? Cubed baked tofu, scallions, and tamari? Spinach (frozen?!), cannelini beans, and a little marinara?

I stir some bottled stir-fry sauce (Saigon Sizzle!) to ramp up my brown rice. It's good by itself, or as a zesty side dish with something with a powerful but simple flavor--like plain grilled salmon.

Brown rice, broccoli, toasted walnuts and a tiny dusting of soy cheese. Can also add sauted onions and garlic too.

I recently made a meal out of the Trader Joe's pre-cooked brown rice and their pre-packaged Indian meals (I had the Madras Lentil meal, but there are a bunch I plan on trying). It was way yummy, satisfying, and super easy to make. I just put both the rice and the Indian meal in a bowl together and nuked it until it was hot.

It's good in a wrap sandwich, with lettuce, cheese, salad dressing, or anything else.

I found the teryaki tuna fillets from starkist (while overpriced, IMO) are really good over brown rice. A very filling, quick lunch, which is good, since I'm a teacher and quick and easy are two very important rules!

Brown rice is GREAT if you steam it in Swanson's garlic flavor chicken broth rather than water.
