Hi all, I'm vegetarian and I love barbeque sauce. Does anyone have a good vegitarian barbeque option?

Here are some ideas for vegetarian BBQs. However, not all of the recipes use BBQ sauce.

Cajun Grilled Veggies
2 zucchinis, cut into 1/2-inch slices
2 large white onions, sliced into 1/2-inch wedges
2 yellow squash, cut into 1/2-inch slices
1 teaspoon Cajun seasoning
1/2 teaspoon salt
1/2 teaspoon cayenne pepper
1 tablespoon Worcestershire sauce (if you are vegetarian be sure to check that yours does not contain anchovies)

Place zucchinis, white onions and yellow squash in a large bowl. Lightly spray and toss with a cooking spray.
In a small bowl, mix together Cajun seasoning, salt, cayenne pepper and Worcestershire sauce. Pour over the vegetables. Cover and marinate in the refrigerator at least 30 minutes.
Preheat an outdoor grill for high heat and lightly oil grate. Place marinated vegetable pieces on skewers or directly on the grill. Cook 5 minutes, or to desired doneness.

Easy Grilled Zucchini
Just simply cut zucchini into 1/2" rounds and marinate in your favourite Italian FF dressing for 2-3 hours. Place zucchini on preheated grill and cook for 3-4 minutes.

Veggie Foil Packages
Makes 6 to 8 servings

3 white onions, sliced to 1/4 inch thickness
9 frozen small corn cobs
1/2 pound snow peas
seasoning salt
2 cubes ice

Lightly oil grill and preheat to high.
Place onion slices on a large sheet of aluminum foil; bring up edges of foil a bit to form a foil 'package'. Add corn and snow peas to onions. Spray veggies with a cooking spray. Season with seasoned salt to taste, then lay ice cubes on top of the whole thing. Seal well in a foil 'packet'.
Place foil packet on top shelf of preheated grill while cooking your favorite meats; grill until corn is firm but tender. Open foil packet and serve!

Easy Portobello Mushroom Burgers
Makes 4 servings

4 large portobello mushroom caps

Cut stems off of mushrooms, and place smooth side up in shallow dish. Brush on your favourite BBQ sauce and let stand at room temperature for around 15 minutes, turning once to brush the bottom.
Preheat grill for medium high heat.
Brush grate with oil. Place mushrooms on the grill over medium high heat. Grill for 5 to 8 minutes on each side, or until tender. Brush with more sauce if desired. Top with slice of FF cheese if desired during the last 2 minutes of grilling.

Serve on a bun as you would with any burger

Homemade Lowfat Barbecue Sauce

1 lb Italian plum tomatoes -- Cored & Seeded
2 cloves Garlic -- finely chopped
2 tb Onion -- finely chopped
1 ts Chili flakes
1/2 ts Corn oil
2 tb Water
2 tb Tomato paste
1 tb Worcestershire sauce (again check for anchovies in the ingredients)
2 tb Red wine vinegar
2 1/2 tb Molasses
1 ts Mustard powder
1/4 ts Salt
1/2 ts Tabasco sauce

In a food processor, puree the tomatoes, and set aside. IN a 1 1/2 quart saucepan, saute the garlic, onion, and chili flakes in oil for 2 minutes. Add the pureed tomatoes and remaining ingredients, and simmer for 15 minutes, uncovered.

YIELD: Makes 2 cups

Each 1/4-cup serving: 32 cals, 0.7gm protein, 0.4gm total fat, 7.1gm carbo, 0mg chol, 0.9gm fiber, 95mg sodium, 19mg calcium

Now here are some recipes that use BBQ sauce but which you don't necessarily grill.

Easy BBQ Sweet Potato Steaks
Slice sweet potatoes lenght-ways into around 1/4" slices.
Brush with your favourite BBQ sauce. Cook on preheated grill, turning once.

Vegetarian Sloppy Joes

Serves 8

1 med. onion chopped
1 med. green pepper chopped
3 cups cooked brown rice
2-16 oz. cans Mexican style pinto beans
3/4 cup BBQ sauce

Saute onions and green peppers until tender crisp. Add rice, beans, and barbeque sauce. Simmer 10-15 minutes until heated through.

Serve over your choice of rolls/bread.

Easy BBQ Veggie Pitas
Choose your favorite veggies. For example:
yellow squash
And saute lightly in a pan prepared with cooking spray. Just before veggies are done, add in some BBQ sauce. Continue to cook until sauce is heated through. Then serve in whole wheat pita pockets.
