Default Turkey Breast?

I've got this turkey breast out of the freezer. Normally we eat pretty plain but I've got time to mull it over today. What would you do with it?

Throw it on a pan, brown both sides, set it aside. Saute mushrooms and onions in the same pan, deglaze with a little white wine, throw in a low fat/low sodium cream of mushroom soup, return the turkey breast to the pan, cover and simmer until breast is fully cooked.

Cut into slices serve over whole wheat pasta or brown rice!

OR cut into little pieces and stir fry with a ton of veggies.

OR make turkey fajitas!

OR....lol, ok I'm done!

I like to bake them, then slice them down and keep the meat around for sammiches.

The above suggestions sound yummy

I'm a sandwich gal, so here are my suggestions:

I cook mine in a skillet with a dose of worcestershire sauce, a splash of liquid smoke, salt & pepper. It gives it an easy outdoor bbq flavor that's divine on a roll with lettuce, tomato. crispy turkey bacon strips & fat-free mayo.

It's also good sautéed with mushrooms, onions & jarred brown gravy then topped with melted part-skim mozzarella. Serve it on a roll (of course ) for a hot turkey sandwich.

And for a third sandwich option, I'll rub it with cajun spice, salt & pepper then sautée. Layer with lettuce, tomato, onion & sliced/mashed avocado on a roll for some more good eats.

So many choices! I'm glad I've got more in the freezer. We won $300.00 worth of meat from a butcher who has chicken and turkey breast!
I just roasted it but made a delicious pasta salad with spinach pasta and pesto seasoning. YUM!

MMMMMM.....thanks for the ideas! I'll have to pick up a turkey breast when I go shopping! I get so stuck in a rut with eating only chicken and fish---I forget about poor old turkey until it is holiday time!

The yummiest turkey I ever had was on a pita with a cranberry and cream cheese spread with honey roasted pecans.

I don't know about what happens where you folks live, but Safeway here has whole frozen turkeys on special about once every 2 months. Luckily we have a stand alone freezer, so we buy 2 or 3 - at 99 cents a pound it's an unbelievable deal. We use the carcass to make a LOT of broth, which has much more flavour than chicken - we get probably 10-16 cups of good broth from one turkey.

Wow Sue that's great! I don't have a freezer big enough to hold a all my regular stuff plus a whole turkey. Then I wouldn't have room for the ice cream! KIDDING!

There is nothing like home made broth, it's great that you can make your own.
