Roasted Asparagus with Garlic Cloves
Here's new twist on one of my favorite roasted veggies.
Heat oven to 400 deg.F Rinse a bunch of asparagus and snap off the tough ends. Dry thoroughly with paper towels and put on a sheet of aluminum foil on a cookie sheet (helps with cleanup). Peel several cloves of garlic (as many as you want) and place on foil with asparagus. Sprinkle with a little salt and 1 tbsp. of extra virgin olive oil and toss asparagus and garlic cloves together (by hand works best). Roast for 1/2 hour or until garlic is soft inside. This makes a nice vegetable side dish or an omelet filling. The garlic tastes much milder when it's roasted. |
