Default Anyone have a good, simple mac and cheese recipe??

I am a mac and cheese freak. The only low fat macaroni and cheese I like is the processed stuff in a microwaveable cup. Anyone know of a good recipe that doesn't call for a ton of ingredients??

wheat penne pasta, lo fat cheese and non fat milk!!! bake in the oven!

there's a great recipe on the WW website, easy, VERY tasty (husband loves it).

Even easier, Barilla Plus pasta, Kraft 2% cheddar, 1 tbsp (per serving) of lite margarine, few tablespoons of fat free 1/2 and 1/2, tsp of dijon mustard. Cook the pasta, drain it, return to pot, mix in the other ingredients, throw a few breadcrumbs on top, bake.

Low Calorie Macaroni and Cheese

2 cups uncooked macaroni
1 (12 oz.) container low-fat cottage cheese
1 (5 oz.) can evaporated skimmed milk
1/2 cup reduced fatCheddar cheese, shredded
1/2 tsp. salt
Freshly ground black pepper

Cook and drain macaroni according to package directions. In blender process cottage cheese and milk until smooth. Place in small saucepan and, stirring constantly, heat over medium-low until smooth. Add Cheddar cheese, salt and pepper. Stir until cheese melts. Fold in macaroni. Serve immediately or place in covered casserole dish and bake 20 minutes at 350 degrees.

Makes 8 (1/2 cup) servings
