good recipe
okay ladies here is the recipe for the pineapple pork roast.
1 2 -to 2 1/2 pound boneless pork top lion roast (single loin)
salt
pepper 1/3 cup pineapple preserves
2 table spoons coarse - grain mustard
1/4 teaspoon dried mint or basil, crushed
1 15 1/4 ounce can of pineapple chunks (juice pack) drained
1 trim fat from roast. Place roast in a shallow roasting pan. season with salt and pepper. roast uncovered, on 325 for 1 hr
2 meanwhile for glaze, in small bowl combine preserves musard and mint or basil
3 spoon about half of the glaze onto the meat. (after its cooked) add pineapple chunks to the roasting pan roast for 15 20 mins more or untill 155 degrees spooning on the remaining glaze over once.
4 remove from oven and cover with foil and let stand for 15 mins.
