Pineapple Puffins recipe does anyone....
 
have this recipe. It was one from the 1980's from Weight Watchers and I would love to get the recipe if it is still out there somewhere. thanks in advance.

Is this the puffin recipe?
 
WEIGHT WATCHERS PINEAPPLE MUFFINS

1/4 c. cornmeal
1/4 c. dry milk
1 tsp. baking powder
1 pkg. Sweet & Low
1/2 c. crushed pineapple
1 egg

Mix all ingredients well. Spray muffin tins with Pam. Bake at 350 degrees for 15 minutes. Makes 6

Thank you! I did a Google search for this recipe and this thread came up. I remember my Mom making these in the 70's, and had been trying to find the recipe.

They sound really interesting! I used to make the WW pumpkin muffins all the time that were based on dry milk, and they were good.

Have you tried grilling or roasting pineapple? It's awesome! Especially with a tiny drizzle of chocolate syrup (it's good plain, too!)

Assuming you used non-fat dry milk (and I'm not sure they make any other kind) and the recipe made 6 muffins, the nutrition per muffin would be 50 calories, 1g fat (.5g saturated), 8g carbs (.5g fiber, 3g sugar), and 2.5g protein.

It seems like these must be pretty small muffins, but for 50 calories, I may have to give them a try anyway. Maybe I'll use just egg whites and whip them into a foam before adding them to the rest of the ingredients.

I love pineapple and it is one of those fruits that is lower in calories than you'd expect--only 14 calories per oz. Heck, grapes have 20 calories per oz! Mostly I just eat it plain though.

The other things that are awesome roasted are peaches. I really like the white ones roasted and served with a little Greek yogurt in the middle. I can hardly wait til the good ones are in the market.
