What's your fav cottage cheese concoction
 
I need some new ideas. Ive been to the Krista Smash site, and used alot of those recipes, and a few others. But I need some new ideas.

My latest fav is to take Mel's protein bar break it all up in bitty pieces and mix it up with a serving of cottage cheese that has been mixed with vanilla and splenda :T

How are you eating your cottage cheese?

My ideas aren't very creative, I'm afraid. I prefer my cottage cheese plain, although I do like mixing it up with scrambled egg whites or mashed potatoes, lol.

I love my lowfat cottage cheese with pineapple. But, I remember a friend in college would mix his with peas and sunflower nuts and ranch dressing (all from a salad bar). It was heavenly. Probably loaded with calories, too!

I'm a cottage cheese purist as well. Sometimes I'll put a mound of it on my plate and surround it with a ring of sauteed or steamed carrots. Very pretty. :)

* One cup LF cottage cheese, 1/2 cup Kashi GoLean, and 1/4 packet dry SF chocolate pudding mix. :T

* One cup LF cottage cheese, 1 T natural PB, and 1/4 packet dry SF chocolate pudding mix. :T :T

* In a recipe:

Baked Pumpkin Custard

1 large can pure pumpkin
1.5 cups low or nonfat cottage cheese
1.5 cups Splenda
1.5 cups Eggbeaters
2. teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon cloves
1/2 teaspoon nutmeg
1/2 teaspoon salt

Process all in the food processor until well-mixed and smooth. Spray six custard cups with PAM. Divide mixture equally in cups. Bake at 325 degrees for 45 minutes or until top is lightly browned.

Nutrition Info per serving

110 calories
1 g fat
12 g carbs
13 g protein

I can't add anything from plain. I hate fruits in mine personally. If u really want a healthy one though, try eating ur's with spinach on the side. That stuff is wicked health.

Some of these sound great...thanks!!! Some I do already too. I cant eat the stuff by itself, its been quite the accomplishment to eat it at all :lol: I like it fixed up tho :T

This morning for breakfast I had 1/2 ff cottage cheese mixed with 1/2 unsweetened applesause, 1 TBSP ground flaxseed, and about 7-8 pecan halves (broken up). It was yummy tasting and kept me going all morning as I was in interviews without much time to eat in between. :)

I prefer dry curd cottage cheese when I have it,and add it to my salads for lunch,with a lite spicey mustard and honey dressing....mmmm :hungry: Otherwise I'm not very creative with mine.

I add chocolate whey protein powder and splenda to my cottage cheese. It tastes so yummy! It reminds me of chocolate crispy or chocolate cocoa puffs cereal I used to eat!

Okay, this is not healthy but it is my favorite. Cottage cheese mixed with crushed nacho cheese Doritos. It is so good!

1/2 cup oatmeal (dry) cooked with water, 1 cup mixed berries or a diced apple, add 1/2 cup cottage cheese and some sugar free pancake syrup.

:) I like to mix my cottage cheese with lightn 'lively bluberry yogurt. That way you get a protein with a dairy.

MMm, I love pumpkin, god that sounds goooood. I bet you could make a low cal pie like that, too. :D

ewww CC with doritos?? sorry that doesn't sound good at all to me.

but then again...with my sweet tooth I prefer to mix FF cottage cheese with jello powder (any flavor) and it is soo good. I also will top it with all bran for fiber. Those davinci or torani SF syrups are yummy to add too-i like the fruit ones (strawberry or raspberry)

for a not so sweet idea I mixed CC with salsa, brown rice and soy meat. it looked absolutely disgusting but was pretty tasty (to me)

A few years ago there was no way you could get me to touch the stuff but I love it now!

For lunches sometimes I'll open a can of tomatoes and drain. Then I microwave them enough to be warm but not hot. Then I pour some cottage cheese on top and some parsley flakes and there's my lunch with some milk and a salad. Yum...Now I'm craving some and I have no cottage cheese in my house right now :( :(

I must be the odd person....because I LOVE COTTAGE CHEESE!!!

1......cottage cheese with 1tsp of ketchup
2.......cottage cheese with 1 tsp of strawberry jam
3........cottage cheese, half can of crabmeat, heinz chili sauce
4.......cottage cheese, cocoa powder, splenda, sliced fresh strawberries in a fajhita wrap
5........cottage cheese added to the final stages of scrambled eggs and a splash of worchester sauce (sp?)
6........a nice fresh green tossed salad, heaping spoonfull of cottage cheese on top with dressing on the side.

I'm the same as someone else who says they like pineapple with their cottage cheese. We also do peach halves with cottage cheese, or mandarin oranges with cottage cheese, etc. My mom use to have this when I was growing up every Sunday night along with spaghetti. So, it's comfort food for me.

Not recently, but I have done this MANY times. (Being that tortilla chips are my main weakness!) Have to say nowadays that cut up tomato and S&P is a favorite. I also like Red Robin seasoning mix on it. I will have to try the crab meat and chili sauce!!

A good friend of mine makes cottage cheese enchiladas - fills the tortillas with a mixture of cc, green chilies, sauted onions and some taco seasoning, rolls them up and pours green enchilada sauce over them and a little monterey jack cheese on top. They are super yummy. She's vegetarian, but you could add shredded chicken too. I might have to play around with it now since I'm remembering how yummy they are! It's been years.

I love that with the baked doritos and I also love it with whole wheat pretzels broken up in it....yum...gotta have the crunch!:D

How large is your can of pumpkin? Do you mean the 29oz one or the 15oz one? I learned my leason that everyones definition of 'large' can of pumpkin or pineapple or whatever isn't always my definition the hard way with a few recipes. Also, could you use regular egg white instead of egg beaters? I'm too cheap to buy egg beaters...besides, my cat needs an egg a day and she doesn't mind if its only the yolks ;)


I personally don't like cc, but I can eat it in recipes like this one. I just have to hide it- my Mom loves the stuff and just about every time I buy some to bake with, she eats it before I get a chance...even if its just the next day when I need it. But if I ask her if she wants me to buy her any, the answer is always no-lol

Christine - yep, it's the 29 oz can and sure you can use egg whites instead of Eggbeaters. :)

I've been thinking of tweaking the basic recipe to make a baked brown rice pudding (maybe with a few raisins), minus the pumpkin and changing a few of the spices ... :T

OK....maybe this is too simple, but I do cottage cheese w/ splenda, cinnamon, nutmeg, and some chopped nuts (preferably pecans). I also like it with chopped tomatoes & cucumbers, S&P, and balsamic vinegar; kinda like a greek salad version.

I think that cottage cheese has to be IMHO one of the best foods on this planet! LOL.

Normally, I eat for breakfast. I either have it with some diced cucumbers or tomatoes and a light sprinkling of season salt or I have it mixed with a container of ff vanilla yogurt and a few dashes of cinnamon, nutmeg, and possibly a light sprinkling of Kashi Go Lean.

Mixing it with tuna is pretty good, too. Also, cottage cheese and pork and beans is my hubby's fave(not healthy, though).

In place of ricotta
 
I love cottage cheese, especially in hot and savory dishes. I use it in place of ricotta (for lasagna, eggplant florentine, baked ziti, etc.) because it's moister and cheesier. It's also good on pizza - I make pita pizzas with marinara, part-skim mozzarella, sliced mushrooms, olives and little blobs of cottage cheese on top.

And of course it's great in omelets, baked potatoes and as a filling for fruit crepes. Cottage cheese is like the 8th wonder of the world!

A Simple One
 
Here is a simple one, and one of my favorites. Low-fat or FF cottage cheese with walnuts and cinnamon to taste stirred in. If you want, you can also add a little bit of splenda to sweeten it up. I know I personally have an INCURABLE sweet tooth! Good luck.

I like it a lot of ways, including with a few drops of almond extract & splenda. I also make a jello dessert; in a 4-cup measuring cup, filled almost full with frozen berries, then pour over the hot jello mix (sf); it sets almost instantly because of the cold. A cup of that with 1/2 cup of cottage cheese is sweet & cheesy. cheerio, Sue
