Ok, I need some ideas for dessert. I mean "real" dessert. You know, for those times when a piece of fruit is just not going to cover it, but yet low cal. Lately I have been having some sugary cereal, but would like to have soething different.

Apple Pita Pie
 
Apple Pita Pie -2 servings

2 apples peeled and sliced
1/8-1/4 tsp cinnamon
One packet Splenda or 2 t splenda granular
One Whole Wheat Pita
1 tsp Smart Balance margarine

In small bowl, mix apples cinnamon and sweetener. Slice open pita bread and stuff with apple mixture. Drop margarine in several small pieces into pita. Wrap pita in foil. Bake at 350º for 35-40 minutes. Enjoy!


This is awesome! I add a wee bit of whole wheat flour to mix. Cut in half and enjoy, it's good cold too.

One of my favorite desserts: chocolate angel food cake (just use the box mix and add 1/4 cup of cocoa and/or chocolate extract)

After cooling the chocolate angel food cake, I cover it with a "frosting" I make with sugar free chocolate pudding and chocolate whipped cream

Can you tell I LOVE chocolate??? :love:

I have another favorite chocolate recipe which my dh, who HATES "diet" foods dies for!

The recipe if for chocolate bread pudding! I LOVE bread pudding which is very commonly made in New Orleans. The chocolate, IMO, only makes it better. It is like a very moist, rich chocolate brownie/cake.

Chocolate Bread Pudding

1 2/3 c skim milk, divided
3 TBS semisweet chocolate chips
1 oz square unsweetened chocolate, chopped OR oil and cocoa powder according to pkg directions to equal 1 oz chocolate
1/2 c sugar
1/2 tsp vanilla
2 large eggs, lightly beaten
4 cups cubed french bread
cooking spray

Preheat oven to 350 degrees. Combine 1 c milk and chocolates in a large microwave-safe bowl. Microwave on High 3 minutes, or until chocolate melts, stirring every one minute. Add remaining 2/3 cup skim milk, sugar, vanilla, and eggs, stir well. Add bread cubes, toss well to coat. Let stand 10 min. Spoon mixture into an 8" square baking dish coated with cooking spray. Bake at 350 degrees for 25 min or until set.
Yield: 9 servings
Points: 3
Cal: 145, Fat 4.4, Fiber 0.5

I use splenda lite for the sugar, egg beaters for the eggs and diet bread (40 cal. slice) for the bread.

The Points and calories were figured with the original recipe (by someone else so I'm not sure of the accuracy please check if you are on points), not my slimmer version.

That sounds wonderful.

Another 'skinny' dessert I frequently make that my husband even loves is chocolate eclair dessert. I take one box of sugar-free vanilla pudding and mix it with an 8oz tub of lite Cool Whip. Then I take another box of sugar-free pudding, chocolate flavor, and leave that one alone, I don't mix it with anything.

(oops, forgot to add, I buy the INSTANT pudding and fix according to package directions)

Layer the vanilla pudding/Cool Whip mix in between reduced-fat graham crackers in a 9x13 (or 8x8, which will give you a 'higher' dessert) baking dish, then when the vanilla pudding is used up, add one more layer of the graham crackers, then top the whole thing off using the chocolate pudding as icing. Cover and put in the fridge for a few hours (or even overnight) so the graham crackers can soften and there ya go.

Don't know the exact calorie amount, but because it's lite Cool Whip, reduced-fat graham crackers and sugar-free pudding, it's not much per serving.

It's heavenly. My favorite desserts have always been something with either pudding or jello and whipped cream.

When I have chocolate cravings, I like a cup of nestle's rich hot cocoa, and a dollop of fat free whipped cream (around 120 calories)

Another good fixer-upper for chocolate cravings are the Quaker Quakes chocolate flavored mini rice snacks.

cool whip between 2 graham crackers and then put in the freezer.

Not really a desert, but quaker's breakfast cookie is a good sweet fix.

Smoothie Pops

Jello with COOL WHIP on top. Treat yourself.

I can't think of too many deserts because I haven't gotten that far to think about it. I just have a fudgecicle, icecream sandwhich, or sugar free candy.
