Default A boring bag of frozen veggies

I have about 15 bags in my freezer. Any ideas? My mind is blank. I've got a lot of blends, like peppers, beans, carrots, etc. I just can't resist the 10/$10 sales at Kroger. My goal is to eat at home more, and restaurants less!

Soup! Since the weather has gotten colder I'm making a lot more soup. Gotta love the crockpot. I almost always start with a packet of Knorr Vegetable soup mix and add from there. Meat balls, turkey, pasta, veggies ....

Vegetable Chicken Soup

1-2 lbs. Chicken breast, cut in serving size
1 can diced tomatoes (check for 3 or less g of sugar)
2 carrots, sliced
3 stalks celery with tops, sliced
2 medium onions, diced
3 cups water
Salt and pepper to taste
3 chicken bouillon cubes
1 package (10 oz.) frozen mixed vegetables
(Add during last 2 hours of cooking)

Put all ingredients in cooker.
Cover and cook on Low for 6 to 8 hours (High 2 1/2 to 4 hours).

Easy Creamy Chicken Vegetable Soup

3 (10oz.) cans condensed cream of chicken soup, 3 cans water
1 can condensed cream of mushroom
1 lb. boneless skinless chicken breasts or tenderloins, boiled, chopped
5 oz. each frozen green beans, okra, baby limas
1 c black eyed peas (cooked)
1 bay leaf
¼ t each garlic powder, pepper, thyme, oregano
1 t kosher salt

Put all ingredients in crockpot on high until it begins to simmer, then cook on low for 2 or 3 hours. Even better the next day, but does not freeze well.

Or- maybe make beef stew in crockpot

Theres always Chili (I sneak Veggies everywhere i can) I also do a 1 skillet meal usually boneless skinless chicken or Boneless Pork Chops or ground turkey saute with garlic and frozen onions and peppers (Lazy Gourmet!) spices can be anything chinese, italian, indian that's up to you When the meat is cooked through I toss in a bag of frozen veggies and cover it so the veggies steam
If I make chili this way or something italian inspired I usually top it either in skillet or on plate with Shredded LF cheese

Hi Jennifer,

I just checked this at my fav recipe site allrecipes and got 391 recipes. Go to the main page, click the search button then go to Ingrdient Search - Enter frozen vegetables and there you go!

Another place is birdseyefoods.com. I bet green giant and all the other frozen veggie makers also have recipe sites too!

There is always a way to sneak in more veggies!

You could always do what me and my family does: sheperds pie, veggie beef soup/stew, or some kind of cassorole (can't spell)

I love the California Blend vegetables...broccoli, cauliflower, carrots. I throw in a bag of plain squash. Spray with Pam, add Calendar's Greek Seasoning, cover with foil, and bake about 30-45 minutes. It's a touch spicy but I love it. Low cal, low points, and very filling!

Chicken Pot Pie!

My sister made this and loved it.

2 cups chunked cooked chicken breast (skinless/boneless) approx. 6 or 7 oz.
1 can (10 3/4 oz) condensed cream of chicken soup (Campbells 98% FF)
1-10 oz pkg. frozen mixed vegetables, thawed
1/2 cup of skim or 1% milk

1 box of refrigerated (15 oz) ready-to-use pie crusts. Just use 1 crust.

Heat oven to 425 degrees F. Mix FILLING ingredients in a medium bowl. Open one of
the crust packages that comes in the box. Unfold and slice down the middle. Using 1/2
of the cut crust, line a 9" pie plate (you will have to make a few cuts to get the crust in
the pan just right. This keeps from using both pie crusts, thus adding more points to the
recipe); add FILLING. Using the other 1/2 of the crust, arrange it on top of the pie,
making more cuts to get it completely covered. You will not have a very attractive pie,
but the taste and low-points is what counts in this tasty recipe.
Bake 25 to 30 minutes until pastry is golden and filling is hot.

I love frozen veggies 'cause they are so easy to fix and can be dressed up with different flavors. I throw them in the microwave for about 5 minutes. I then take them out, stir and add flavor then microwave for 1-2 minutes. The dish I cook them in also doubles as a serving dish! Easy, low calorie, not too expensive and versatile!

Some of my faves are:
1. a splash of teriyaki sauce with or without chicken broth
2. italian seasonings and a few shakes of parmesan cheese
3. minced garlic and butter spray or butter buds
4. 1-2 tablespoons of ragu alfredo sauce with 1/2 skim milk, sprinkle of parmesan cheese---yummmm alfredo sauce for low calories

5. for green beans: onion powder and butter spray or a pseudo "lubee" (middle eastern dish) by adding a can of crushed tomatos (drain well) and a sprinkle of cinnamon ---add this to frozen beans and microwave for several minutes, stirring during cooking

If you just want to eat the veggies, this is what I do.

Lemon Juice... Low calories, and its really yummy!
