Help with a side dish??
 
Hi everyone,

I'm trying to decide on a menu plan for tonight. I'm making balsamic chicken and a salad. I'd like to have another veggie with it (preferrably something lower fat AND kid-friendly). I'm pretty sure I have corn, peas, green beans, carrots and sweet potatoes at home. We're not real big veggie fans at home, but we HAVE to increase the amount of them we eat.

Can anyone help with a simple, yummy side dish recipe?

I'd start with something simple, like green beans. Get everybody used to eating a small amount at each meal, and then as they get used to trying new foods, you can spring the more creative, yummy dishes on them.

Carrots are good cooked, and kids sometimes eat them better with a little brown sugar on them.

yup, I cook baby carrots and then use spray butter (o cals) and a bit of brown sugar. Some times I just use Splenda instead to save calories!

I often put out a plate of raw veggies (grape tomatoes, mini carrots, sliced cuke, snow peas) and some hummus or cottage cheese for dipping. Usually it gets eaten.
