Tonite I had the roasted eggplant, zuchinni, onions, mushrooms, with the reduced balsamic :hun: Delish! Now I must try that Eggplant Dip!

2 eggplants 1/2 c lemon juice 1/2 c tahini 1 T olive oil 3 cloves garlic chopped 1 1/2 t. salt Bake eggplants whole until they kind of fall in on themselves. Peel and seed. Blend all ingredients in food processor. Serve w/ pita chips and crudites. note: I often reduce tahini to 1/4 to 1/3 cup to cut down on calories. You can also throw in a handful of chopped parsley and pour olive oil on top when finished for the authentic Lebanese version, but it is good without as well. |
