Low calorie Blueberry Muffins
 
I am looking for a low calorie Blueberry Muffin receipe. I heard of a weight watchers muffin made with bread instead of flour but I can't find the receipe anywhere. If anyone out there knows this recipe I would love to have it. If not any other blueberry muffins recipe would be great. Myself and my husband starting a diet a week ago but I would sure like to use up my blueberries.

I use the bluberry mix, and frozen blueberries instead of the cranberry mix.

course | Breakfast

l box Krusteaz FF Cranberry Orange Muffin Mix
2 cups extra fiber All Bran Cereal
2 1/4 cups water
2 Tsp. baking soda
2/3 cup Splenda (really works well in this recipe)
1 Tsp. cinnamon
1 Tsp. orange extract
1 cup fresh or frozen cranberries
1 15 oz can pumpkin
1/2 cup raisins (next time I may substitute mini choc. chips)


Soak the All Bran in 1 1/4 cup water until softened.
Drain cranberries included in box mix, set aside.
Add muffin mix, baking soda, Splenda, cinnamon, pumpkin, orange extract and 1 cup water to soaked cereal. Mix completely.
Fold in canned and fresh cranberries.
Fill 24 sprayed muffin tins (I use papers instead) almost full.
Top each with raisins.
Bake at 400 degrees for 20/25 minutes or until a toothpick inserted comes out clean.
