Question Leftover Pork

Hi
I am looking for a way to use leftover pork. Anybody out there have a receipe
for a main meal in which I could use leftover pork, propably with rice or noodles.

If it's cooked, I'd put it in a sandwich. You caould always chop it into little pieces and stir fry it (spray oil) with lots of veggies, some soy sauce then bang it on top of the rice. Don't forget the beansprouts for authentic stir fry!

Use the fat free cream of mushroom soup and put the pork in that. serve over brown rice. or spinach noodles.

The only way I like pork is barbecued, lol. But a nice Cuban sandwich would be good! Alton Brown has a great recipe on the foodtv site http://www.foodnetwork.com/food/reci..._28711,00.html You could use a light swiss cheese and possibly omit the butter to reduce calories.

I cut it into small pieces and heat it up with some barbeque sauce (thinned with water if necessary) and serve it over rice or potato or on a roll.

Like virtually everything other leftover meat, I either stir fry it with loads of vegies or dice it on top of a big salad. Pretty much the same ingredients but one version gets cooked
