Low Cal Chicken and Sausage Jambalaya!
I just made up this recipe tonight and my hubby and I loved it! It made 3 servings @ 400 calories per serving.
Here goes; 3/4 cup brown rice (makes 3 servings when cooked) (510 calories) 9 oz chicken breast (245 calories) 2 Aidells Roasted Red Pepper W/ Corn Sausages (200 calories) 1 small white onion - chopped (40 calories) 1 green bell pepper -chopped (33 calories) 4 garlic cloves (minced) 1.5 (15 oz) cans stewed tomatoes (blended) (175 calories) 1/2 cup water with chicken boullion cayenne pepper (or frank's hot sauce) bay leaves oregano thyme salt & pepper Cook 3/4 cup brown rice to 1.5 cups water w/ chicken boullion for as long as directions indicate. Spray another pan w/ oil or non-stick spray and add minced garlic, chopped onions and bell pepper - saute and set aside before they turn too soft. Cut up chicken breast into small pieces & cook (season with cayenne and pepper), add cut up sausages and warm. Add garlic, onion & bell pepper to meat. Stir in blended tomato sauce & water - add spices to your liking. Bring to a boil, then cover, turn to low and simmer for 5 to 10 minutes. Put brown rice in each bowl and add jambalaya on top. You can add low fat shredded cheese atop the jambalaya (80 calories per serving) if you like. ENJOY - so yummy and filling! Melanie :D |

It's delicious and filling and not bad on calories! Some people add shrimp to the dish too. :D |
