Please help me plan nephew's 2nd b-day party...
 
My nephew's b-day is the 31st of this month.

He loves Dora the Explorer & I plan to use her as a theme for his birthday party.

I need some foods that I can fix (or buy) that revolve around this theme. I'd like them (the foods) to be healthy (for me) & fun (for him).

The only recipe that I have at the top of my head is the one for Rotel Dip.

Healthy Version:

* 97% Lean Ground Beef
* Velveeta Light
* Rotel Tomatoes

SPF's Sloppy Joe's

1 pound lowfat ground beef
1 pound lowfat ground turkey
1 can normal Manwich
1 can BOLD Manwich

Make according to package directions, draining meats as much as possible. (I use several paper towels to get as much out as possible.) Pour into crock pot or slow cooker & serve on buns.

Dora the Explorer Trail Mix
unsalted peanuts
raisins
unsalted sunflower kernels
chocolate chips or M&M's (smaller amount of these, just enough to give color & a little sweetness)

Mix in a big bowl & then into small bags or cups for the kids. You could put whatever he likes in these, such as breakfast cereal, etc.

Are you wanting to make the food more healthy, or just trying to come up with any ideas? I'm assuming you want a mexican type theme.

If you want it more healthy... salsa instead of a cheesy dip is a lot better for you. Or there are black bean salsas..You can also make salsas that would appeal to the sweet side - fruit salsa with pineapple, etc in it and serve it with baked tortillas.

Quesadillas are an easy thing to make - my kids adore them. You could make your own taco/burrito/fajita bar.. let people make their own and pick their own toppings. My kids love when they can make their own stuff.

Just some ideas :)

An "explorer" fruit plate. Use fruits maybe all people haven't tried but could explore... mango, papaya, guava, star fruit, pomegranite.

Sounds like fun to me, anyway! :lol:

A good lowfat Mexican dip for kids:

SPF's Pink Dip

lowfat or fat free sour cream
mild thick & chunky salsa

mix equal parts together, serve w/chips or veggies. :)
