  • I love a good salad

    My current favorite is Riviera blend salad mix (butter lettuce and other delicate varieties) along with a little blue cheese, diced apple, and T.Marzetti Light Balsamic dressing. Sometimes I add walnuts.

    Mock fried chicken salad: I cook and dice a Morningstar Farms Chix patty and add it to salad with Marzetti Just 2 Good Honey Mustard dressing, along with grape tomatoes or anything else on hand.

    Add some shredded cabbage, sunflower seeds, and raisins or dried cranberries to a salad with a mild dressing, such as a light balsamic dressing.


    I'm always looking for new ideas. What are you favorite salads?

    i'm glad to hear i'm not the only one who has discovered the yummy wonders of morningstar farm's chic patties/nuggets cut up in salads. mmmm. so good with tons of veggies-- it's a complete dinner all alone.

    two fave side salads right now
    1- mixed field greens w/ toasted pecans, dried cranberries, and annie's goddess dressing (http://www.anniesnaturals.com/Merchant/index.htm)

    2- mixed field greens w/ cashews, goat cheese, and grapefruit sections dressed with grapefruit juice and olive oil
  • half a bag of baby spinach leaves
    half a package of sliced mushrooms
    baby tomatoes
    ranch dressing
    sprinkled w/a tsp of unsalted sunflower kernels
  • One of my favorites is mixed greens, baby spinach, carrots, celery, tomatoes, green onion, red bell pepper, cubed baked chicken breast (or cooked with taco or fajita seas.) with salsa, a little fat free sour cream, maybe some finely shredded sharp cheddar cheese if you like and crumble a few baked tortilla chips on top. Or you can lay the salad mixture on top of a layer of the chips and eat like nachos or a taco salad.

    My favorite these days is all the leftover green vegies in the fridge: broccoli, green beans, fresh spinach, romaine, with a cup of ground turkey-black bean chili dumped over the top.

  • Here is my fav (suggested to me from Mel)

    Shredded lettuce and Broccoli cuts, topped with Turkey Chili, FF shredded cheese, FF sour cream, salsa, onions and banana peppers. Its a great alternative to the traditional fat heavy taco salad and the broccoli adds such great texture to it.

  • Spring Mix lettuce, black olives, baby carrots, cauliflower, grape tomatoes, sweet onions, bell pepper and sliced lean cold cut chicken or turkey...I use Ranch Dressing.
    Sometimes I'll add avocadoes. YUM!!

    Suzanne- I get freebies whenever I drive "her" car. I found about 5 bottles of different (unopened) dressings rolling around among all the other junk on the floor and trunk of the car

  • I love salad and eat tons....ussually I do a chop salad type of thing so I chop up as much crunchy stuff as I can, red peppers, green peppers, granny smith apple, celery, (what ever else I might have) then I chop the greens, ussually, leafy lettuce or spinach, and some cabbage. I never buy dressing, I ussually use some oil and viniger with a packet of splenda and some seasonings depending on my mood, some times cumin if I want a taco kind of flavor, some times curry, some times garlic. IT is so yummy, my son always says, why do you eat so much salad. oooh 'cause its so good. If I want some protein, I trow in tuna or feta cheese.

    A lot of times I copy salads I see at restraunts, I also make a good corn, black bean, tomatoe salad, I just chop everyitng u p toss in a little oil/vinger/splenda/garllic/onion. so yummy and high in fiber I can add this to a leafy salad or use as a side dish.
  • my favorite salad is one my dh makes for me. i know how to make it, but his is just better for some reason. he mixes romaine with sliced tomatoes, sliced white onions, kalamata olives, feta cheese, sometimes avocado, and white balsamic vinegar (he puts olive oil on his, but i don't need that fat.) it sounds simple, but for some reason, it hits the spot every time. i also like it with grilled chicken or shrimp.
  • My current favorite is chopped mixed greens with diced purple onion and cantaloupe. I then dress with Light done right Raspberry Vinaigrette made with extra virgin olive oil. Sounds like a strange combination, but very yummy!!!
  • I LOVE salads!

    A new fave of mine is when I cook steak and potatoes for my family. I use some steak cuts in a salad with red onion and cucumber chunks with a light balsamic vinagrette. If I have feta cheese around, that's a nice addition.

    And I am into fruit salads this summer. Romaine greens with some blueberries, strawberry slivers, and pineapple pieces with a light poppyseed dressing. Almonds are wonderful with this one too.

  • I was at a conference last week and one day's salad was spinach, with sliced strawberries and sliced red onions and just a few peanuts. It had a strawberry based dressing which was just a little thickened, not really creamy (more like a very thin ranch), and not oily at all. It was soooo good. I wish I could get the recipe.
