One of my favorite summer salads is the broccoli, cauliflower, bacon and cheese salad. Has anyone modified it so that it is better for you, and have you figured out the WW points? Or maybe you can tell me where I can find the recipe.

I'm sure the sugar can be substituted for an artificial sweetener and the cheese and mayo can be substituted with low fat, but I haven't taken the time to figure it out.

Broccoli Cauliflower Salad
 
I don't know if this is exactly the salad you had in mind but I adapted this from a recipie that was going around a few years ago.

2 slices bacon, cook, drain, and crumble (2 Points)
3 cups cut up broccoli & cauliflower
Set these aside and Mix:

4 Tablespoons fat free mayo (1point)
1 packet sugar substitute
2 teaspoon diced onion (fresh)
1 Tablespoon parmesan cheese(1 point)
2 Tablespoon skim milk
Just before serving mix together. I get 4 points for the whole thing which ,if I remember, serves four.( I don't count the skim milk but for those of you that need to be exact (raise your hands) you could subtract it from your cereal milk amount. Anyway, it's good so I hope you try it.

try this version
 
I say this long long ago in Cooking Light magazine, they called it King Cole Salad. They chooped broccoli and cauliflower reaaly small, and added shredded carrots and red onion chopped really small. They dressed it with a vinaigrette with Parmesan. I would use a fat free Italian dressing.
This was quite good, but take some Beano with it!

Thank you Sturg. This is what I was looking for, although the recipe I have calls for cheddar cheese, I guess you could do parmasean instead. I think I'll also try the one above with the vinagrette.

Your broccoli and cauliower salad is wonderful. I almost forgot to cook the bacon to add to it. I think it would have been great even without the bacon. DH and I ate the whole thing and I didn't get seconds. It is always nice to have another way to serve a vegetable. Thank you for sharing.

Glad you liked it , lighter, I use bacon bits in mine as I am a vegetarian and it works as well. I only use bacon if I am making it for others.

Cauliflower Broccoli salad
 
Baco's are made from soybeans. I believe Hormel makes a bacon bits product with 100% real bacon but the rest are soy.
