So I just made something for dinner that is kind of like turkey tetrazinni, but with canned white tuna. It was so yummy, fast, and pretty healthy!
1 can solid chunk tuna in water
frozen peas (I like it without peas, too...and maybe more capers!)
red pepper strips
onion
capers
dried dill, thyme, oregano, parsley
salt and pepper
noodles - I used wheat fettucini
fat free cream of chix concentrate, only about 1/4 can
chicken stock
white wine
here's what I did:
saute the onions and peppers with pam and the herbs, s +p on M/MH
after they soften a little, ad some white wine and let it reduce a little
add the stock and soup, the capers and peas, and the tuna
let it heat up, and the sauce is done!
Put on top of the noodles or mix it together! The dill and the capers really add something, and the white tuna is nice because it doesn't totally disintegrate in the sauce. It's pretty good, and it's a decent replacement for tuna helper!
I use this one more on the days when I haven't already had a lot of carbs, so that I feel like I'm getting a filling meal instead of a restricted one...oh, the mind games that help us
